Are you also like me, thinking what to cook when everything feels so expensive these days? And stretching the budget is getting harder every day. 🥺 Let me share with you one of my favorite go-to meals that's cheap but filling. It's Pancit with Egg or Pancit on a Budget. 🍜
It costs just a few pennies, has simple ingredients, and tastes delicious. 🥰
Ingredients:

• 1 pack pancit noodles (120g)
• 1 egg
• 2 small red onions
• 3 cloves garlic
• 1/4 cup soy sauce
• 1 cup water
• 1 tbsp cooking oil
• salt & pepper
Let's cook!

First, I started by heating the pan and pouring the cooking oil. Once it's ready, I tossed in the garlic and red onions. I sautéed them until they turned soft and fragrant.



Next, I pour in the liquid... I add the soy sauce first, and then the water. I give it a gentle stir and let it come to a nice simmer.

Then it's time for the noodles. I place the whole pack into the pan, toss it, and turn the noodles so they soak up all the tasty liquid and get coated evenly.

I let it cook and keep simmering for about 3 minutes, until the noodles are tender but still have the nice chew. Then I adjust the taste by putting a pinch of salt and pepper.


Once the noodles are almost cooked, that's when I crack the whole egg right on top of the noodles. Then I just toss and mix everything together. The eggs cook right in the sauce, making it creamy and delicious. ✨ I let it cook for a minute or two until the egg is fully cooked. 👌🏻

And that's it! I serve it hot while it's still creamy and delicious. 🍜
When money is tight, we don't need to sacrifice feeling hungry. Simple meals like this that aren't expensive can be as tasty as any fancy dish. 😍
