
Last week, I stumbled upon a recipe I never knew would complement the taste.
When we visited my parents, Mom cooked chicken adobo with sotanghon.
She said she just imagines the taste and ends up trying it.
And you know what? I did not expect it to work that well.
The sotanghon soaked up the adobo sauce, paired perfectly with the chicken.
So today, I decided to copy Mom's unexpected masterpiece.

Ingredients: chicken, sotanghon, vinegar, soy sauce, garlic, onion, black pepper, salt to taste, sugar (optional), cooking oil

Preparation:
• Before anything else, marinate the chicken in soy sauce, a bit of garlic, pepper, and vinegar. Then soaked the sotanghon in warm water. This softens the noodles just enough, so they don't overcook later. Next, chop the onion and crush the garlic.

• Heat oil in the pan, and saute the garlic then the onions until fragrant.

• Put the marinated chicken pieces, browned on each side slightly to seal in the flavor and give the dish a deeper color.

• Next, pour in the marinade, a bit of water, and the pepper.

• Let everything simmer until the chicken turns tender and the sauce reduces. Next, drain the softened sotanghon and add it straight into the adobo.

• Let the noodles absorb the sauce. Sprinkle a little salt to adjust the seasoning, and a small pinch of sugar if you like a balanced flavor.
