A Special Dish: Heart & Liver Affair Adobo

Hi pals, happy Tuesday!

‎Hope you're all doing well and had a fabulous week! 🌷

‎As for me, things are going smoothly, thank goodness!

‎This Sunday, we decided to spend quality time with our parents and visit them for dinner.

‎When we arrived, they were still working, so I suggested that I would cook our dinner.

‎My Mom said that there's a chicken liver and heart in the fridge... And while preparing it, my Dad suggested pairing it with potatoes.

‎So join me today as I prepare a special dish called "Heart & Liver Affair Adobo".

Ingredients:

‎• chicken liver and heart
‎• potatoes
‎• vinegar
‎• soy sauce
‎• water
‎• garlic
‎• onion
‎• ginger
‎• bay leaf
‎• whole peppercorns
‎• salt and pepper to taste
‎• cooking oil for frying

Preparation:

‎1. I started by heating oil in a pot until it was hot enough to fry. Then I added chunks of potatoes, fried them until they turned golden brown.

‎2. After setting aside the potatoes, I sauteed the chopped onion, garlic, and ginger.

‎3. Next, I added the chicken liver and heart, and cooked them until they turned brown.

‎4. Then, I poured in vinegar and soy sauce, followed by water, bay leaf, and a few pepper corns. I let it simmer, allowing the flavors to meld.

‎5. As the meat cooked, I stirred the mixture occasionally, tasting and adjusting the seasoning as needed. Once it tasted okay I added the fried potatoes back and let it simmer for another 5 to 10 minutes to let the flavors blend perfectly.

‎6. Finally, I seasoned it with salt and pepper to taste. And just like that, the "Heart & Liver Affair Adobo" was ready to serve.

‎My hubby absolutely loves this chicken liver. Actually, it's not just about the taste but also because it helps fight anemia, as it is packed with iron and vitamin B12, perfect for keeping his blood healthy.

‎But of course, it still needs to be consumed in moderation as it is also high in cholesterol and vitamin A.

‎For its taste, it has a deep and savory flavor, and a slight hint of sweetness.
