Hoy quiero compartir con ustedes una experiencia que nació de una visita familiar y terminó convirtiéndose en una oportunidad para descubrir nuevas formas de preparar algunos platos caseros.
Este viernes salí junto a mi esposo a realizar las compras del mercado y, aprovechando el recorrido, decidí pasar a visitar a mi hermano, a quien hacía algún tiempo no veía.
Al llegar a su casa, la alegría fue inmediata. Mi hermano y su esposa nos recibieron con mucho entusiasmo y enseguida nos invitaron a quedarnos a almorzar para conversar, compartir y ponernos al día.

Acepté con gusto la invitación, porque además de disfrutar ese momento familiar, siempre me gusta conocer la manera en que otras personas preparan sus comidas. Cada cocina tiene sus pequeños detalles, y sabía que podía aprender algo nuevo de la forma en que mi hermano prepara sus platos.
Mientras conversábamos, comenzó a preparar el almuerzo. El primer plato que elaboró fue un potaje de frijoles negros, utilizando una técnica diferente a la que yo acostumbro.
Para esta preparación utilizó una taza de frijoles negros previamente revisados y lavados, trozos de calabaza, yuca, dos encuentros de pollo, pasta de tomate y especias como ajo y comino, que son claves en su cocina.

Después de lavar bien el pollo, revisar los frijoles y cortar las viandas en pequeños trozos, colocó todos los ingredientes dentro de la olla de presión junto con las especias y suficiente agua, pero sin agregar la sal en ese momento.
Dejó cocinar todos los ingredientes juntos durante aproximadamente 45 minutos bajo presión.
Al abrir la olla, los frijoles ya habían soltado toda su pulpa y las viandas estaban prácticamente desintegradas dentro del caldo.
Mi hermano retiró los dos encuentros de pollo, separó la carne y la desmenuzó. Reservó una parte para la otra preparación e incorporó solamente un poco al potaje.
Después removió bien y dio un ligero aplastado a las viandas que aún quedaban, logrando que tomara una textura más espesa. Agregó una cucharada de sal, un toque más de comino y dejó la olla un minuto más bajo presión para que absorbiera los sabores.
Al abrir nuevamente, había quedado un potaje cremoso, espeso, con un agradable aroma y el sabor que aporta el pollo durante la cocción.
El segundo plato que fue elaborando mi hermano fue un preparado de pollo desmenuzado con calabaza.

Para esta preparación utilizó la carne de los encuentros de pollo que había reservado anteriormente y trozos de calabaza cortados en pequeños cubos.
También utilizó dos cucharadas de aceite de oliva, ajo laminado, comino triturado y tres cucharadas de pasta de tomate.
Lo primero que hizo fue colocar en una sartén el aceite, el ajo, el comino y la pasta de tomate. Realizó un ligero salteado para integrar los sabores y luego agregó el pollo desmenuzado y los trozos de calabaza.
Continuó salteando la preparación, agregó media taza de agua, un tercio de cucharada de sal y un toque más de comino. Luego tapó la sartén y dejó cocinar a fuego bajo durante aproximadamente 15 minutos.
Durante ese tiempo, la calabaza fue absorbiendo el sabor del pollo y las especias, hasta integrarse con la carne desmenuzada. Al destapar, lucía muy apetecible y con un sabor exquisito.
Me sorprendió cómo, con este sencillo procedimiento, mi hermano logró aprovechar el pollo en dos preparaciones: el potaje y este preparado con calabaza, haciendo que alcanzara para más porciones al compartir en familia.
El arroz también llamó mucho mi atención por la manera en que mi hermano lo prepara.

Para esta ocasión utilizó dos tazas de arroz criollo. Primero revisó los granos y luego lo lavó.
Algo que compartimos en la cocina es ese gusto por el sabor del ajo. Mi hermano comenzó preparando un ligero sofrito con algunos dientes de ajo y luego incorporó el arroz, dejándolo saltear unos minutos para que tomara ese aroma.
Después agregó la misma medida de agua que de arroz, una pequeña cantidad de sal y lo llevó a la olla de presión.
Su técnica fue dejarlo aproximadamente cuatro minutos bajo presión. Al estar listo, me sorprendió la textura que logró: un arroz suave, ligeramente húmedo y perfecto para acompañar el potaje.
Amigos, hoy rompí la dieta. Mi hermano nos sirvió a mi esposo y a mí unos platos bastante generosos, de esos que te hacen recordar todos esos kilos que intentas bajar, pero que se vuelven difíciles de controlar cuando estás disfrutando de cada bocado junto a la familia.

A Visit, a Lunch, and New Cooking Secrets.

Today I want to share with you an experience that began with a family visit and turned into an opportunity to discover new ways of preparing homemade dishes.
This Friday, my husband and I went out to do some grocery shopping, and while we were out, I decided to stop by and visit my brother, whom I had not seen for quite some time.
When I arrived at his home, the happiness was immediate. My brother and his wife welcomed us with great enthusiasm and quickly invited us to stay for lunch so we could talk, share, and catch up.

I gladly accepted the invitation because, besides enjoying that family moment, I always love learning how other people prepare their meals. Every kitchen has its own little details, and I knew I could discover something new from the way my brother prepares his dishes.
While we talked, he started preparing lunch. The first dish he made was a black bean stew, using a technique that was different from the one I usually follow.
For this preparation, he used one cup of black beans that had been checked and washed beforehand, pieces of pumpkin, cassava, two chicken leg quarters, tomato paste, and spices such as garlic and cumin, which are key ingredients in his cooking.

After washing the chicken well, checking the beans, and cutting the vegetables into small pieces, he placed all the ingredients into the pressure cooker along with the spices and enough water, but without adding salt at that moment.
He cooked all the ingredients together for approximately 45 minutes under pressure.
When the pot was opened, the beans had already released their natural texture, and the vegetables had practically blended into the broth.
My brother removed the two chicken leg quarters, separated the meat, and shredded it. He reserved part of it for the other preparation and added only a small portion back into the stew.
Then he stirred everything well and lightly mashed the vegetables that were still remaining, giving the stew a thicker texture. He added a tablespoon of salt, a little more cumin, and placed it under pressure for one more minute so it could absorb all the flavors.
When he opened the pot again, the result was a creamy and thick black bean stew, with a pleasant aroma and the flavor that the chicken adds during cooking.
The second dish my brother prepared was shredded chicken with pumpkin.

For this preparation, he used the chicken meat he had previously reserved and pieces of pumpkin cut into small cubes.
He also used two tablespoons of olive oil, sliced garlic, ground cumin, and three tablespoons of tomato paste.
First, he placed the oil, garlic, cumin, and tomato paste in a pan. He made a light sauté to combine the flavors and then added the shredded chicken and the pumpkin pieces.
He continued sautéing the preparation, added half a cup of water, one-third of a tablespoon of salt, and a little more cumin. Then he covered the pan and let it cook over low heat for approximately 15 minutes.
During that time, the pumpkin absorbed the flavor of the chicken and spices, becoming perfectly combined with the shredded meat. When uncovered, it looked very appetizing and had an exquisite flavor.
I was surprised by how, with this simple procedure, my brother managed to use the chicken in two different preparations: the stew and this pumpkin dish, making it enough for more servings when sharing with family.
The rice also caught my attention because of the way my brother prepares it.

For this occasion, he used two cups of Cuban-style rice. First, he checked the grains and then washed them.
One thing we share in the kitchen is our love for the flavor of garlic. My brother started by making a light sauté with a few garlic cloves and then added the rice, allowing it to cook slightly so it could absorb that aroma.
After that, he added the same amount of water as rice, a small amount of salt, and cooked it in the pressure cooker.
His technique was to leave it under pressure for approximately four minutes. Once it was ready, I was surprised by the texture he achieved: a soft, slightly moist rice that was perfect to enjoy with the bean stew.
My friends, today I broke my diet. My brother served my husband and me some very generous portions, the kind of meals that make you remember all those pounds you are trying to lose, but that become difficult to control when you are enjoying every bite together with your family.
