Oatmeal and Banana Pancakes [ENG/ESP]

It feels so good to make something yourself and enjoy it: a healthy, nutritious breakfast—and, as I said, something different for your mornings.

And as you know, I’m on a diet. Although these days, as I’ve been following the meal plan my nutritionist gave me, I’ve been feeling a little bloated. But I guess that’s just my body reacting to eating things I’d stopped eating. Anyway, she has a private group for her patients, and she shares recipes and some of her meals there; among them, she posted her breakfast of oatmeal and banana pancakes. I said to myself, “I have to try these.” I looked up recipes and started cooking.

They were easy to make, and I ended up with quite a few; best of all, they were super delicious. Now I’ll show you and tell you how I made them and the ingredients I used.


INGREDIENTS: 👇

  • 1 egg
  • 1 cup rolled oats
  • Baking powder
  • Vanilla
  • Cinnamon
  • 1 banana
  • Water

PREPARATION:


The first thing I did was mash the banana with a fork.

I added the egg, which I had beaten beforehand.

Then I added the vanilla, cinnamon, and baking powder, and finally the oat flour.

Now we start mixing everything together so it becomes more compact and the consistency is thinner; we add a little water—not too much, so it doesn’t get too runny—just thick enough.

Now all that’s left is to place it in a preheated, lightly greased skillet; add our mixture, and let it cook for a few minutes on both sides.

And here are our delicious pancakes; you can make them whatever size you like; I made them small, and I got 5.

I really liked the result; the banana gives it that sweet flavor, just like the cinnamon—a unique, delicious taste—and they’re fluffy and soft, hehehe.

SPANISH VERSION

Qué rico se siente preparar algo hecho por ti y disfrutarlo: un desayuno saludable, nutritivo y, como dije, distinto para tus mañanas.

Y es como saben, ando en mi dieta, aunque estos días, aplicando un poco el plan alimenticio que me mandó la nutricionista, me he sentido algo inflamada, pero bueno, supongo que por esto, comiendo cosas que había dejado de comer, el cuerpo lo siente. En fin, ella tiene un grupo privado de sus pacientes, y por allí comparte recetas y algunas de sus comidas; entre ellas publicó su desayuno de unas panquecas de avena y cambur. Me dije: "Tengo que probarlas". Busqué recetas y comencé a cocinar.

Fáciles de hacer, me salieron unas cuantas; lo mejor, superricas. Ahora les muestro y cuento cómo las hice y los ingredientes que utilicé.


INGREDIENTS: 👇

  • 1 huevo
  • 1 taza de harina de avena
  • Polvo de hornear
  • vainilla
  • canela
  • 1 cambur
  • agua

PREPARATION:


Lo primero que hice fue triturar el cambur con un tenedor.

A esto le añadí el huevo, el cual había batido previamente.

Luego le agregué la vainilla, la canela y el polvo de hornear, y por último la harina de avena.

Aquí empezamos a mezclar todo, para que se vaya compactando, y que sea más líquido; le agregamos un poquito de agua, no mucho, para que no quede tan líquida, semiespesa.

Ya solo queda llevarla a la sartén previamente calentada y engrasada, no mucho; añadimos nuestra mezcla, dejamos cocinar por unos minutos, por ambos lados.

Y así nos quedan nuestras ricas panquecas; ustedes pueden hacerlas del tamaño que gusten; yo las hice así pequeñas, y me salieron 5.

Me gustó mucho el resultado; el cambur le da ese sabor dulce, al igual que la canela, un sabor distinto, muy rico, y son esponjosas, suavecitas, jejeje.
