Banana and chia pancakes [ENG/ESP]

Have a great weekend, my fellow food lovers. Here I am again, trying to get back to my healthy recipes, getting creative as always—and I mean that literally: I improvised this recipe. I wanted to try chia again, but this time with some green plantain pancakes.

I had these ingredients on hand, so I thought, “Well, let's mix them all together and see what happens,” and that's what I did.

Ingredients:

  • 1 green banana
  • 1 egg
  • 1 tablespoon Greek yogurt
  • 1 tablespoon chia seeds
  • vanilla
  • 1/2 tablespoon baking powder

Instructions:

I grated the green plantain, and I soaked the chia seeds in a little water for a few minutes. Once everything was ready, I put it in the blender and added the egg, along with the yogurt, a pinch of baking powder, a pinch of salt, and a splash of vanilla.

Once I had this mixture ready, I poured it into the pan—which I had greased beforehand—and let it cook on both sides for a few minutes.

And there you go—that’s how my pancakes turned out. I’ll admit the banana flavor is strong, but they still turned out really delicious. I ate them—I ended up with just these two pancakes, as you can see—no flour, no sugar, delicious and nutritious.

You can serve them with whatever you like; I ate mine with just avocado, hehe, but they go well with scrambled eggs and avocado, or even a Greek yogurt dip—that idea came to me later.😜

SPANISH VERSION

Feliz fin de semana, mis amigos amantes del buen comer. Aquí ando de nuevo, tratando de retomar mis recetas saludables, inventando como siempre, y digo literal, esta receta la improvisé; quise probar de nuevo con la chía, pero en esta ocasión, con unas panquecas de plátano verde.

Tenía estos ingredientes a la mano, y me dije, bueno vamos a mezclarlos todo a ver que sale, y asi hice.

Ingredients:

  • 1 plátano verde
  • 1 huevo
  • 1 cucharada de yogurt griego
  • 1 cucharada de chía
  • vainilla
  • 1/2 cucharada de polvo de hornear

Instructions:

Rallé el plátano verde, y la chía la puse a remojar con un poco de agua, unos minutos. Al tener esto listo, lo llevé a la licuadora, agregué el huevo, junto con el yogurt, el toque de polvo de hornear, una pizca de sal y un chorrito de vainilla.

Ya con esta mezcla, lo llevé al sartén, engrasado previamente, lo dejé cocinar por ambos lados, por unos minutos.

Y listo, así quedaron mis panquecas. Les confieso que el sabor del plátano es fuerte, pero igual quedó muy rico. Me las comí, me salieron justas estas dos panquecas, como ven, sin harina, ni azúcar, ricas y nutritivas.

Las pueden acompañar con lo que gusten; yo me las comí con aguacate solo, jeje, pero quedan bien con un revoltillo de huevo y aguacate, incluso una crema con yogurt griego, esto se me ocurrió después.😜

Ahhhhh que rico se ve. Pero le tengo amor odio a la Chía. Me encanta como se combina con la arepa pero con la oanqueca no se, la sensación de ese crujiente no me apetece mucho. Pero la tuya se ven buenas. Bendiciones

Bueno, pero no se siente al licuarlas jeje, la verdad, aquí prevaleció el sabor del platano, es cuestion de acostumbrarse, yo no lo hago muy seguido, y primera vez que lo hago con la chia, no quedaron mal, el sabor si habria que acostumbrarse jeje, saludos amiga.
