Today i would like to share the recipe of Sev Tamatar ki Sabji tomato curry recipe made with ripe tomatoes, cream and crispy ratlami sev noodles. Sev is spicy and crunchy gram flour noodles. It is spicy, tangy and Sweet in taste which is served in lunch/Dinner paired up with served with chatpati , Paratha or steam Rice depending on your choice. It is popular onion tomato gravy instead of adding paneer or potato i just added Ratlami Sev. Thick Ratlami sev is added just before serving to maintain crunch or pour the hot gravy over the sev in a bowl. It takes very minimal time to cook and with common ingredients which is available at home. Try this recipe, you would like it for sure.

Ingredients 📃
• 3 tbsp oil.
• ½ tsp cumin.
• pinch hing.
• 5-6 chopped cloves garlic.
• 1 inch ginger.
• 2 green chilli.
• 1 chopped onion.
• 2 chopped Tomato.
• ½ tsp turmeric.
• ½ tsp of Garam Masala.
• 1 tsp chilli powder
• 1 tsp coriander powder
• ½ Amul cream.
• 1 cup sev.
• 2 tbsp kasuri methi.
• salt to taste.
• water as required.
• Green coriander leaves for garnish.
Process 👨🏻🍳

Heat oil in a wok/kadhai on medium flame.

When the oil is hot, add asafoetida cumin seeds, let them crackle then add Ginger & garlic, and green chilli saute it untill it get aromatic.

Add the chopped onions and saute for 3-4 minutes or until they are translucent.

Lower the flame,then add the turmeric powder, red chili powder, coriander powder, and salt. Sauté on a low flame till the spices turn aromatic. Be careful there is high chance of Burning spices.

Add the chopped tomatoes and mix well. Let them cook till they turn mushy or cook until the oil separates.

Add the crush kathuri methi and Garam Masala.

Now add water, Mix well and let it boil for 3-4 minutes.

Keeping the flame on low, add fresh cream.

Cook on a low flame till the curd gets well combined and turns silky smooth.

Just before serving, add sev. don't add it before otherwise it get soggy. Garnish it with green Coriander Leaves.

Finally, enjoy Sev Tamatar Recipe with rice, roti or Paratha.
