Hello everyone! Today I decided to pick some coconuts because the tree already has many fruits, also I wanted to drink some fresh coconut juice because it’s healthy and I will use the coconut meat for our snacks. I want to share a sweet and simple Filipino kankanin recipe called INDAY INDAY is a repetitive feminine named filipino rice cake delicacy, actually it’s a combination of two well-loved delicacies the palitaw and bukayo in a filipino term. This is one of the easiest native snacks to make, using only three basic ingredients that you might already have at home;
Ingredients:
2 cups ground glutinous rice
2 cups coconut meat
1 cup brown sugar
Step by step process:
- Prepare the ground glutinous rice
• Start by pounding the glutinous rice until it becomes fine and add just a little water and mix until it becomes like dough. It should be soft but not too wet. - Shaped the dough
• Take a small amount of the dough and roll it into small balls - Steam the rice balls
• Steam for 10 minutes or until cooked.
• This already cooked once a ball starts to float - Make the Bukayo (Sweet Coconut Toppings) for 20 minutes
• While waiting for the balls to cook, prepare your sweet coconut toppings called bukayo.
• In a pan, add young coconut meat and brown sugar
• Cook over medium heat while stirring often
• The sugar will melt and coat the coconut, becoming thick and sticky. This is bukayo.
• Once done turn off the heat and let it cool a little - Combine and serve
• Place them on a plate or banana leaf and enjoy eating.
