In this post I will be sharing with you how I made Sweet Potato Moi Moi which can serve as an alternative to the popular moi moi made from beans. I saw the recipe on a channel on social media and I have pinned it to my profile that I will try it out anytime I have the opportunity. Even though the result didn't come out as I expected it was still a good one. I would rate my moi moi a 6.5/10. I'm sure I will get it more better in my next trial. I observed that I may have added too much water when I was blending which made it look too soft, but nevertheless it was a good try because of the natural taste it provides.
Let me walk you through the process of making sweet potatoe moi moi.
Ingredients
4 sweet potatoes
Dry tomatoes
Dry scotch bonnet
Onions
¼ cup vegetable oil
¼ cup palm oil
Step by Step
Start by peeling the sweet potatoes and wash before you cut it into small sizes that can be easily blended. Then set it aside.
I'm making use of dry tomatoes and scotch bonnet, so I will be washing it thoroughly several times even with hot water.
Then I will Blend it together with some onions and the chopped sweet potatoes.
Blend it until it is very smooth and be sure to add water little at a time to ease the blending process if it is too thick.Pour the mixture into a bowl where you will mix your palm oil and vegetable oil with the batter you have mixed.
In the tutorial I watched the chef didn't add any seasoning cube nor salt - I guess that's one of the defects that made me rate my result 6.5/10.
If you want to try this recipe you may add some seasoning cubes, and salt or if you have some meat stock, you can add it to the mix for taste.
Next, pour the mix into your containers and place into a pot and steam for about 30 minutes on medium heat.
To check of it is done you can use the toothpick pick technique.
When your moi moi is done, let it cool down before you serve it.
