In my opinion, if there is one breakfast that is peculiar to all class, region or tribe in Nigeria, I would say it is pap or it's equivalent 'custard' and akara. This combo is a match made from heaven. Well, bread and akara can also sneak into the WhatsApp group. LOL. From Lagos to Abuja, Enugu to Port Harcourt, Benin to Kano, this combo is one of the most-consumed meals in our homes and also in the streets.

Growing up, I can remember the memories of waking up to loud voices of pap sellers walking through our street as early as 6.30am with rhythmic sounds advertising raw pap. I can even still vividly hear the song like advertisements in my ear as I type this post. This reminds me of the kind of community life we live in those days.

As the day begins to open up, another lifesaver for most people who don't have the luxury of time to cook at home is up for business and this is the akara sellers. Before 7am, you can spot them frying akara by roadsides using firewood or charcoal pots with a small or umbrella or under tress near busy roads, schools, hospitals, bus stops and so on. Also, you can easily spot a large cooler filled with pap by one side for people who want to grab a quick breakfast before heading out. Some also offer bread, fried yam, fried plantain, and fried potatoes.

Well, the only notable difference between akara and pap is their names but whether you call it akara, kosai or bean cake or ogi, akamu, koko or pap - they are the same thing.

Pap has become a staple in my household now that I’m a parent. My son loves it so much when I add milk or tom brown, sugar or honey. I don't allow pap to run out in my house. I'm always preparing a new batch before the current one finishes.

Today, I will be showing you how to make akara at home for yourself or your family.

Ingredients

  • 2 cups beans
  • 1 onion
  • 1 tsp salt
  • 1 seasoning cube
  • 1 tsp dried ground pepper
  • 500 ml vegetable oil

Step by Step

  • Start by peeling the beans by rubbing them between your hands and removing the shafts completely by rinsing in my multiple water.

  • Next, add some onions and pepper with the beans and blend into a thick smooth paste.

  • Be sure not to add too much water when grinding or blending.

  • Pour the blended mixture into a mixing bowl, add your salt and seasoning cube and mix thoroughly.

  • Next, start frying in batches until you fry all the batter on both sides until they are golden brown.

  • Enjoy hot with your pap or custard or bread.
