Today, in this post I will be sharing with you how I prepared one of my family's favourite dinner - Grilled Catfish. We are a big fan of grilled fish in my home especially when it is either catfish or tilapia. There is just something satisfying about the smoky and spicy flavor that these fishes offer. However, I observed that there is a noticeable difference between my grilled catfish and the ones we buy outside. The grilled catfish we buy from vendors usually have this rich reddish color that makes it so attractive to passerbys. After sharing with a friend that lives next door, she made me understand that they use food coloring that are similar to those used in cakes to give it that catching look.
Ingredients
2 medium-sized catfish
1 tbsp vegetable oil
1 tsp curry powder
1 tsp herbal spice mix
2 seasoning cubes
1 medium onion
3 scotch bonnet
Salt to taste
Step by Step
Start by cleaning your fish thoroughly. Use some salt or lime to scrub the body to remove the slime and rinse with plenty of water. Next, slit the belly open and remove the guts and wash thoroughly. Set aside.
Next, we will prep our marinade. In a bowl, scoop the appropriate measurements of your curry, herbal spice, salt and seasoning cubes and mix together with some vegetable oil. Set aside.
Wash and slice your scotch bonnet and onions into your desired size. Set aside.
Now, cut your fish on the sides so that your marinade can enter inside. Rub your mix on the fish (both inside and outside). Afterwards, leave it to marinate for about 30 minutes to 1 hour.
When the marinating process is done pack your sliced scotch bonnet and onions inside the fish, rub more of the mix you used in marinating and use a toothpick to join the tail of the fish to the mouth.
Note: I ran out of aluminium foil papers so I had to improvise by using some aluminium plates. So I found a way to fold the fishes to fit on the foil plate. I would have loved to make the barbecue style of fish but I had to make do of what I have.
Meanwhile, my oven is being preheated. So, I placed the fish on an oven tray and grilled for about 20 minutes. Then I flipped to the other side so that both sides can be well cooked and I still rub more of the marinade mix accordingly.
The grilled catfish is ready.
Meanwhile, I had fried some yam which will be going down with it.
The whole house was filled with the smoky aroma emanating from the oven even before I brought the grilled catfish out of the oven. You can never beat an homemade meal - no coloring, seasoned to perfection and prepared under the best hygienic conditions and above all the joy in the faces of the everyone in the house.
