In this post I will be sharing with you a simple and easy way to prepare chicken curry sauce. This sauce can be paired with rice, yam, pasta etc. This is actually my first time of trying it out but I have been longing to try it out for quite some time. I have watched some videos on my favorite food channels so I was sure I was going to nail it anytime I try it out. This generation is undoubtedly blessed with so much especially the internet and social media - there is nothing you want to learn that someone haven't done a tutorial about either in fashion, engineering, hair styling, cooking, home decor and so on.
Let's begin the cooking process -
Ingredients
Chicken
5 green bell pepper
5 yellow bell pepper
3 scotch bonnet
6 big sized carrots
2 medium-sized onions
2 tsp curry powder
4 seasoning cubes
½ tsp herbal spice mix
1½ tbsp all-purpose flour
2 tbsp cooking oil
Chicken stock
2 cups water
Salt to taste
Step by Step
We will start by seasoning the chicken very well with curry powder, seasoning cubes and salt. Rub the seasoning into the chicken and allow it to marinate for about 20 minutes.
When the chicken have been properly marinated, place them in a pot and cook until it is soft. Afterwards, you can grill or fry depending on your preference. Set it aside.
Next, wash your green bell pepper, yellow bell pepper and carrots. Then cut them into desired sizes and set aside.
For your scotch bonnet and onions, wash them as well and blend using your blender.
Now, in a pot, add some oil and place on medium heat. Add your carrots, green bell pepper and yellow bell pepper and continue to stir.
Stir the vegetables in the pot until they are looking cooked. Then toss in your chicken stock to the pot. Add more seasoning at this point if needed. You can also add more water if the chicken stock isn't sufficient to create enough sauce.
Now, let's create the thickener for the sauce, you will mix your all-purpose flour with some water to make a smooth mix. This mix will be poured into the sauce in the pot to thicken it.
Leave it for about 5 minutes under low heat to simmer and you'd see your sauce already thickened.
Serve this delicious chicken curry sauce with some hot white rice or any other food of your choice.
