In this post, I will be sharing with you the dinner I made for my family and I last night. Fried plantain popularly called dodo, scrambled eggs and fried fish was what I made. Plantain is one of my big favorite but lately due to the expensive prices I do not even do as if I see them whenever I go to the market. Growing up, when I was still in my father's house we eat plantain (and other foods) lavishly because we have them grown in our compound. So, they are readily available for us to consume when they are in season.
But, nowadays you have to buy most of your foods from the market and this may be as a result of the fact that our generation do not embrace farming like our parents do. I bought 5 pieces of plantain for NGN3000 (USD1.90). This is quite on the high side as it used to be the cost of a full bunch of plantain some years back.
This meal is perfect for any time of the day either breakfast, lunch or dinner. It is made from ripe yellow plantain. Plantain are similar to bananas but they are not usually eaten raw - they are either boiled, roasted or fried. You don't need to add salt or sugar to the plantain because they are naturally sweet even though some people still add to theirs anyways.
Ingredients
4 big ripe plantains
5 eggs
2 pieces of fish
1 seasoning cube
1 tsp ground pepper
Vegetable oil
1 meduim onion
Salt to taste
Step by Step
Let's start with the fish. I will be frying the fish but before that I will wash and season it with some pepper, seasoning cubes, curry and salt. I will rub the mix in every part of the fish and ensure it is well covered in its juice.
Afterwards, I will place a frying pan on meduim heat, add some vegetable oil and put the fish in it when it is heating up. Then I will fry the fish till it is done.
Set the fish aside in a plate.
Next, we will begin the process of frying the plantain.
Wash the plantain and peel off the back. Cut them into your desired sizes.
Place your frying pan on medium heat and add enough vegetable oil that will cover the plantain.
Add the plantain that have being sliced into the vegetable oil in batches and fry until it turns golden brown.
Ensure to keep an eye on it ao that it won't get burnt. Burnt plantain are not usually appealing to the sight and taste.
Remove them from the oil and set aside in a plate.
Your plantain is ready.
Next, we will make our scrambled eggs.
Crack all the eggs in a bowl, add the desired quantity of your grounded pepper, add some seasoning cubes, add a pinch of salt and cut your onions inside the mix.
Whisk all together until they are fully integrated.
In your frying pan, add some vegetable oil and when it is heated up add the whisked eggs. Let it sit for a few seconds before you give it a good stir.
Stir the eggs intermittently until it is well cooked.
Your scrambled eggs is ready.
Serve your plantain, scrambled eggs and fish - enjoy!
