Banana and Wild Blueberry Muffins

Yay TGIF!

And double yay, as my oldest will be home from camping today. I don't even care that today is super gloomy again, I'm just excited that I'd be reunited with my oldest. Such a drama mama, hey. Only 1 day camping, and this momma truly missing him 😅 He can be so loud and noisy when he's home, and yet, the moment he's gone, even to school, I'd be missing him like crazy. I don't like it when my kids aren't home, I like fattening them up, and when they aren't home, I can't 🤣🤣🤣🤣

I've been making all sorts of tiramisu lately. Well tiramisu inspired. This gloomy day makes me want to make another one, but for now, let me share you this following scrumptious fluffy muffins. I mixed banana and wild blueberries and they are awesome ❤️

2 c flour
1/4 c chocolate chips
1 tbsp chia seeds
1 tbsp BP
2 eggs
2 bananas
1 c milk
6 tbsp peanut oil
1/2 c sugar
1/2 c packed frozen wild blueberries

In a bowl, mix dry ingredients of flour, chia seeds, chocolate chips (you can use whichever you like, sugar free, semi sweet, dark, or milk chocolate chips), and baking powder, until completely combined

Using a food processor, blend eggs, banana, milk, oil, and sugar until well combined and smooth, then pour mixture into dry ingredients

Mix until just combined, you don't want to over mix the batter, and fold in wild blueberries (don't rinse them)

Pour per 1/2 c full of batter into greased muffin pan, and bake on prehetaed 400 F for 25-35 minutes depending on your oven
