Today we'll cook a delicious and filling salad with boiled cod, fresh tomatoes, boiled potatoes, pickles, and parsley. The salad is dressed with mayonnaise and mustard. This is a very filling and delicious salad. It doesn't include canned peas or corn; it's great without them. Let's go, it's salad time!

Ingredients:
● Cod fillet - 700g
● Potatoes - 8 pcs (800g)
● Fresh tomatoes - 2 pcs
● Pickled cucumber - 3 pcs
● Mayonnaise - 400g+
● Fresh parsley - 1 bunch (50g)
● Salt and black pepper - to taste
1.For the salad, pre-cook the cod and potatoes. Simply peel the potatoes and boil them in salted water for 20-30 minutes. Then cool the potatoes and cut them into cubes. I cooked the potatoes in the microwave. I washed the potatoes to remove any dirt, added a glass of water to the bowl, and cooked for 20 minutes at 800W. Then I let the potatoes cool and peeled the skins. I liked cooking the potatoes this way. Boil the cod in salted water with a bay leaf, but add more salt—a tablespoon—because the cod needs to be salty. Let the fish cool and cut into pieces. Add chopped parsley to the cod. The key to this salad is the generous amount of parsley. Cut the fresh tomatoes and remove the juicy cores and seeds. Only the tomato pulp and skins go into the salad, without any excess liquid. Cut the tomatoes into chunks and add them to the salad bowl. Mix the cod, parsley, and tomatoes and add some mayonnaise and mustard.

2.Now add the potato chunks and pickles. Dice the cucumbers too. The cod (I used cod cheeks) in this salad will fall apart, as expected. This is normal. Mix the salad, add the remaining mayonnaise and ground black pepper. The potatoes will absorb a lot of the mayonnaise, otherwise the salad will be too dry. Just let the salad sit in the refrigerator for a few hours, and it's ready to serve. A small note: if you don't have fresh tomatoes, you should use pickled green tomatoes, but skip the pickles.

3.Divide the salad with boiled cod and tomatoes into salad bowls and garnish with herbs. Ideally, you should also garnish the salad with parsley, but I dumped it all in, so I garnished it with dill. A delicious, very filling salad! Filling!

Heute bereiten wir einen köstlichen und sättigenden Salat mit gekochtem Kabeljau, frischen Tomaten, gekochten Kartoffeln, Essiggurken und Petersilie zu. Der Salat wird mit Mayonnaise und Senf angemacht. Er ist sehr sättigend und lecker. Er enthält keine Erbsen oder Mais aus der Dose; er schmeckt auch ohne diese hervorragend. Los geht's, es ist Salatzeit!
Zutaten:
● Kabeljaufilet – 700 g
● Kartoffeln – 8 Stück (800 g)
● Frische Tomaten – 2 Stück
● Essiggurken – 3 Stück
● Mayonnaise – 400 g+
● Frische Petersilie – 1 Bund (50 g)
● Salz und schwarzer Pfeffer – nach Geschmack
1.Für den Salat den Kabeljau und die Kartoffeln vorkochen. Schälen Sie die Kartoffeln einfach und kochen Sie sie 20–30 Minuten in Salzwasser. Die Kartoffeln abkühlen lassen und würfeln. Ich habe sie in der Mikrowelle gegart. Dazu habe ich sie gewaschen, ein Glas Wasser in die Schüssel gegeben und 20 Minuten bei 800 Watt gegart. Anschließend habe ich sie abkühlen lassen und geschält. Mir hat diese Zubereitungsmethode gut gefallen. Den Kabeljau in Salzwasser mit einem Lorbeerblatt kochen, aber noch einen Esslöffel Salz hinzufügen, da er salzig sein muss. Den Fisch abkühlen lassen und in Stücke schneiden. Gehackte Petersilie unter den Kabeljau mischen. Die großzügige Menge Petersilie ist das A und O dieses Salats. Die frischen Tomaten halbieren und die Kerne und das Fruchtfleisch entfernen. Nur das Tomatenmark mit der Schale, ohne überschüssige Flüssigkeit, kommt in den Salat. Die Tomaten in Stücke schneiden und in die Salatschüssel geben. Kabeljau, Petersilie und Tomaten vermengen und mit Mayonnaise und Senf abschmecken.
2.Nun die Kartoffelstücke und die Gewürzgurken hinzufügen. Die Gurken ebenfalls würfeln. Der Kabeljau (ich habe Kabeljaubäckchen verwendet) zerfällt in diesem Salat ganz natürlich, das ist normal. Den Salat vermengen, die restliche Mayonnaise und gemahlenen schwarzen Pfeffer hinzufügen. Die Kartoffeln saugen viel von der Mischung auf, sonst wird der Salat zu trocken. Den Salat einfach ein paar Stunden im Kühlschrank ziehen lassen und servieren. Kleiner Tipp: Falls Sie keine frischen Tomaten haben, können Sie eingelegte grüne Tomaten verwenden, die Essiggurken lassen Sie dann aber weg.
3.Den Salat mit gekochtem Kabeljau und Tomaten in Salatschüsseln verteilen und mit Kräutern garnieren. Idealerweise sollte man den Salat auch mit Petersilie bestreuen, aber ich habe einfach alles hineingegeben und stattdessen Dill verwendet. Ein köstlicher, sehr sättigender Salat!
