That salt rub and soak to pull out the bitterness is a lifesaver , I liked how you drained the water before cooking. For me karela used to be too sharp, but with potatoes and cumin it turns comfort food with rice :). This shows taht a good salt wash can tame it, and I dont miss the bitterness at all.
