My favorite food is pancit. It’s a popular Filipino noodle dish that feels kinda simple yet tasty and full of memories for me. The usual ingredients of pancit include noodles, garlic, onion, cabbage, carrots, green beans, soy sauce, cooking oil, chicken or pork, shrimp, and calamansi or lemon. Some people even add fish balls, kikiam, or boiled eggs, just to make it a bit more special.
I love pancit not only because it tastes great but also because it brings back memories that stick, you know. When I was a child, our family didn’t have a lot of money. So, every time my birthday came, pancit was basically the only “big deal” food my mother could afford to buy or prepare for me. While other kids had huge parties with cakes , balloons and a lot of dishes, I was still okay because I got a plate of pancit shared with my family.
My mother always made sure the pancit was cooked with love. Even if our celebration was plain, I still felt special, because we were together. The smell of garlic and vegetables being cooked in the kitchen would spread through our home, and it made me pretty excited for my birthday meal. For me, pancit wasn’t only “a thing to eat” it was like a symbol of my mother’s long effort, her sacrifice, and her affection.
As I grew older, things got better little by little, but pancit stayed in the same spot as an important part of my birthdays. Up to now, whenever I eat pancit, I remember those childhood days and the real happiness I felt even though we had very little. The dish also reminds me to be grateful for what I have and to appreciate the people who care for me, in a quiet kind of way.
Today, pancit is still my favorite food. It’s flavorful, comforting, and meaningful. Every bite brings me back to my family, especially my mother who really did her best to make my birthdays memorable. No matter how many other foods I try, pancit will always be… my favorite.
