This week was ultra and mega rainy days in our place. We experience strong winds in the afternoon and evening but a normal rain showers on the day. And today I prepared a noodle recipe that is perfect for rainy season, a medicine to a cold and growling stomach.
The following pictures are the ingredients I mainly use in cooking this noodle recipe.
The onion and garlic is the major spices in the beginning for frying and creates a romantic aroma. Also the onion leaves but it will be in the end part of the recipe or the time it's ready to be served.
This is cornstarch. It makes the lomi recipe more viscous. I just put one tablespoon of cornstarch in a glass of water and mix it to the recipe in the pan.
This is a Chinese pechay. We have local pechay but Chinese pechay is more suitable to a lomi recipe beach of it's curly thin and smooth texture. The more Chinese pechay, the more it smells healthy. But in my recipe I really like putting lots of Chinese pechay.
This is the famous wet noodles in my place. We called it pansit miki. This is actually yellow in color because it is preserved through salt. There is also white color in this which is not salty but here in our market I can see it seldom because it expires too fast rather than this yellow one. Among all the kinds of noodles, this is the best one for lomi recipe.
This one is a chicken broth cube. It's ideal on every recipe whether it's a soup or fried one. I don't have a chicken meat so I used this to add flavor. It comes from different flavors like pork, beef and shrimp and in this recipe I prefer chicken.
Then the egg. This is also the ingredient that shouldn't be missed. This adds viscosity to the mixture and an egg flavor. The more eggs, the more it's flavorful but egg is expensive that's why I only put one but in this recipe it's better to have two to three eggs.
The ground black pepper is the most powerful spice too. It adds spiciness and strong aromatic smell. I love putting black pepper to soup recipe so much.
This is a very simple recipe, after frying the onion and garlic then add a lot of water then put all the ingredients and boil it accordingly. Stir the mixture very well and it's ready to serve.
My kids like it very much. They love the noodles because it's soft as well as the soup because they can see egg strips on it.
And I got mine too. I put a lot of ground black pepper to add spiciness since I don't have chili in my kitchen. This is best served while hot.
