As a probinsya girl, I grew up living a simple life in the countryside. Many of the vegetables we eat come straight from our backyard or farm, and one of the most common vegetables on our table is sayote (chayote).

Back then, sayote was often overlooked. It was very cheap, and there were times when people did not even bother selling it because there were few buyers. In our area, it was simply considered an ordinary vegetable that grew almost everywhere. But times have changed. Today, sayote has become a highly in-demand and saleable vegetable in the market.


One thing I noticed is that its value has increased how important this vegetable.. Before, it was usually sold per piece at a very low price. Nowadays, it is commonly sold by the kilo, and many people actively look for it when buying vegetables. As more people discover the health benefits of sayote, its popularity continues to grow.

What makes sayote special for us farmers is how easy it is to grow. The seed comes from the mature fruit itself. Once the fruit starts sprouting, it can be planted directly into the soil. Here in our farm, we do not spend much money growing sayote because it does not require expensive fertilizers or pesticides. It naturally thrives in our surroundings and continues to produce fruits season after season.


Early this morning, my family and I harvested fresh sayote to sell. Harvesting in the cool morning air is always a pleasant experience. After gathering the vegetables, I carefully washed them to remove dirt and make them look fresh and presentable for buyers. Once cleaned, I packed them into cellophane bags and weighed each bag at around 10 kilograms before preparing them for sale.

Of course, I did not forget to save a few pieces for our family's meal. I picked two fresh sayote and cooked them as adobong sayote. It is a simple dish, but it is one of my favorites. The combination of flavors is so delicious that it always makes me eat an extra serving of rice. Sometimes, the simplest meals are the most satisfying because they are made from fresh ingredients harvested with our own hands.

Living in the province has taught me to appreciate simple blessings. Seeing a humble vegetable like sayote become more valuable reminds me that even the simplest things can become important and appreciated over time.
