Delicious cauliflower rice with green beans and carrots [Eng-Esp]

Today I'm going to share a healthy and delicious recipe for cauliflower rice with carrots and green beans, an excellent substitute for traditional rice. It's very easy to prepare and contains many nutrients, as well as being ideal as a side dish to accompany a main course. Cauliflower is a vegetable that contains water, making it important to include in our daily diet. It is rich in potassium and phosphorus, contains vitamin C, and is a good source of fiber. Here is the step-by-step recipe for this simple dish.

Hoy voy a compartir una receta saludable y deliciosa de arroz de coliflor con zanahorias y judías verdes, un excelente sustituto del arroz tradicional. Es muy fácil de preparar y contiene muchos nutrientes, además de ser ideal como guarnición para acompañar un plato principal. La coliflor es una verdura que contiene agua, por lo que es importante incluirla en nuestra dieta diaria. Es rica en potasio y fósforo, contiene vitamina C y es una buena fuente de fibra. Aquí tienes la receta paso a paso de este sencillo plato.

1 cauliflower (200 g), 1 carrot, 6 green beans, 1 onion, 1/2 green pepper, 1 clove of garlic, 1 teaspoon of turmeric, salt and pepper to taste.

01 coliflor de 200 grs, 01 zanahoria, 06 judías verdes, 01 cebolla, 1/2 pimiento verde, 01 diento de ajo, 01 cucharadita de cúrcuma, sal y pimienta al gusto.

The first thing to do is wash the cauliflower and green beans thoroughly. Separate the florets. Then steam them for five minutes. Let them cool and put them in a food processor. You can also use a knife or grater. Remove the ends of the green beans and cut them into squares.

Lo primero que hay que hacer es lavar bien la coliflor y las judías verdes. Separar los ramilletes. A continuación, cocerlos al vapor durante cinco minutos. Dejar enfriar y ponerlos en un procesador de alimentos. También se puede utilizar un cuchillo o un rallador. Quitar los extremos de las judías verdes y cortarlas en cuadrados.

While the cauliflower and green beans are cooking, wash the other vegetables. Cut the onion, green pepper, and carrot into small cubes, peel them, and grate them.

Mientras se cocinan la coliflor y las judías verdes, lava las demás verduras. Corta la cebolla, el pimiento verde en cubitos pequeños,  y la zanahoria pélala y rállala.

Pour a little oil into a frying pan. When hot, add the onion and garlic. When they have softened, add the green pepper. Sauté for a couple of minutes, then add the green beans, carrot, and cauliflower and sauté for a few more minutes.

Vierte un poco de aceite en una sartén. Cuando esté caliente, añade la cebolla y el ajo. Cuando se hayan marchitado, añade el pimiento verde. Saltea durante un par de minutos, añade, las judías verdes, la zanahoria y la coliflor saltea durante unos minutos más.

Season with salt, pepper, and turmeric, stir, and sauté for 3 more minutes until all the flavors are absorbed.


Sazona con sal, pimienta y cúrcuma, remueve y saltea durante 3 minutos más hasta que se absorban todos los sabores.

Our cauliflower rice with carrots and green beans is ready, served hot as a side dish for a delicious lunch.
