Hello, hello hivers and friends of vegan π± community π₯°π



Today am going back to my native root in Nigeria π³π¬ to share this delicious delicacy recipe with you. Its a palm kernel oil π΄rice, which palm kernel oil is the base instead of the usual vegetable oil which makes it taste different. A simple and quick recipe that does not require much ingredients, but always comes out well finished and tasty.
Growing up my mother use to only use palm kernel oil in her cookings , the likes of stews, soup, sauce , porridge beans, porridge potatoes and red sauced rice because of how healthy they believed it was for them since palm kernel π΄is a highly saturated, nutrient-dense oil.
Palm kernel oil is extracted from the seed of the palm π΄fruit, offering intense moisturizing properties for skin and hair, along with high-heat stability for cooking. Rich in Vitamin E, Vitamin K , and antioxidants. It contains no trans- fats, a good source that promotes anti-aging .

Craving the recipe this morning I decided to prepare it to share and show my vegan π± lovers how delicious this meal π₯ taste. Am sure this healthy oil is in export if you want to check it out in big cities π Malls near you.
Below lets prepare this delicious delicacy that is simple and quick.
INGREDIENTS:(4 servings)


240 g of long grain rice
A bowl π₯£ of blend tomatoes of:
4 medium cherry tomatoes
1 red medium onions
4 hot red peppers
1 clove of garlic
Others:
1 teaspoon of tomatoes paste
1/2 teaspoon of chili powder
1 teaspoon of salt
20 ml of red palm kernel π΄oil
STEPS FOR PREPARATION:
Step 1.


We start by boiling water for soaking the rice since we will not per boil it. Pour 3 cups of water in a cup and set it on the cooker to boil
Step 2.



We take the rice into the bowl to wash it thoroughly .



And once the water boils, we pour it into the rice, stir and cover for 10 minutes to tender with the heat.
Step 3.



After 10 minutes, we will sieve out the water from the rice and keep it readily
Step 4.


Next we measure into the frying pan 20 ml caps of red palm kernel π΄ oil to heat up.



Then we pour our blended ingredients into the oil here above .
Step 5.

We allow to fry for 20 minutes, add our tomatoes paste and stir to incorporate them.


And once its drying, we add salt and chili pepper. Then stir properly
Step 6.




Here we add the palm kernel oil sauce into the rice, stir gradually to bring them together


Add two (2) cups of water and incorporate them.
Step 7.



We set the pot back on the cooker for finally cooking.


Once it cooks and drys , we stir it a bit, lower heat and serve.

My mum usually will cook this meal π₯ in a different recipe. The blended cherry tomatoes π onions π§ fresh hot pepper πΆ and the garlic π§ will all be chopped thinly and not blended. So she would just have fried the sauce in the form of gravy. This will leave some pieces of the chopped ingredients visibly in the rice.

Honestly some staple foods never goes away from decades to decades. They can only be modified as generation keeps coming. My elder daughter loves this recipe that she can enjoy π it as breakfast, lunch and dinner. Haha π. Just make sure to add enough spices.
