Well, this time it’s something different—a super easy vegan dish using flour-free ingredients. It’s definitely very healthy since it’s simply baked. This recipe features sweet potatoes and a delicious avocado filling.
Sweet Potato Avocado Tart

The sweet potato avocado tart is a baked tart made with sweet potatoes combined with oats. Of course, it features a tempting filling made from blended avocado. The topping of roasted peanuts makes this dish truly amazing. Curious about the steps? Let’s check out the recipe below.
Ingredients

3 tablespoons oats
1 avocado
Salt to taste
Granulated sugar to taste (optional)
Instructions
Boil the sweet potatoes until tender, then mash them while still hot until smooth. Add the oats and stir until well combined; you may add a pinch of salt.

Press the mixture into a round baking pan—don’t forget to line it with parchment paper—and make sure to leave some space in the center when pressing it down.

Then bake in the oven until done, about 30 minutes on both top and bottom heat.

Next, I mix the avocado with a little sugar—just one teaspoon, though you can skip it. Add salt, then blend until smooth.

Once the tart has cooled, add the avocado and sprinkle with the nut topping. Refrigerate or freeze for about 20 minutes to set.

Result

Ta-da! The result after taking it out of the freezer is absolutely beautiful—the avocado has set perfectly and is ready to enjoy. I tried cutting a slice—it’s set, and the result is truly that beautiful. The baked sweet potato layer is also excellent; I really love the texture. Plus, the avocado is so beautiful that anyone will love it. Just look at the combination of the light green avocado layer meeting the orange sweet potato—they blend perfectly.

As for the taste, there’s no doubt—it’s delicious. The sweet potato layer isn’t hard because I intentionally baked it so it wouldn’t be hard. The sweet potato layer is soft with an oat texture that makes it more varied. The best part of this is the avocado layer—it’s so delicious, with a soft texture and a very light sweetness. I really love it and can finish it in an instant.
