Zucchini and sautéed mushroom risotto/ Risotto de calabacín y setas salteadas.🍄‍🟫🍄‍🟫

Good morning, blog friends, how are you? Today is a relaxing Sunday for me, I'm looking ahead to Wednesday. The weather's a bit gloomy, and my plan today is simple: chill on the couch! But we still have to eat, right?

In fact, today I decided to make a risotto with a slightly autumnal flavor, with zucchini and sautéed mushrooms.

Here's my recipe:

  • 100 grams of rice
  • 90 grams of sautéed mushrooms
  • 2 medium zucchini
  • 4 tablespoons of oil
  • 2 tablespoons of black pepper
  • 6 tablespoons of salt
  • 500 ml of water

First, let's prepare the zucchini: wash them well and then cut them into thin rounds. Heat the oil in a pan, add the rounds, season with three tablespoons of salt, and cook for ten minutes.

Buenos días, amigos del blog, ¿qué tal? Hoy es un domingo relajante para mí, con ganas de que llegue el miércoles. El tiempo está un poco gris, y mi plan para hoy es simple: ¡tranquilo en el sofá! Pero todavía tenemos que comer, ¿no? De hecho, hoy he decidido hacer un risotto con un toque otoñal, con calabacín y champiñones salteados.

Aquí está mi receta:

  • 100 gramos de arroz
  • 90 gramos de champiñones salteados
  • 2 calabacines medianos
  • 4 cucharadas de aceite
  • 2 cucharadas de pimienta negra
  • 6 cucharadas de sal
  • 500 ml de agua

Primero, preparamos los calabacines: lávalos bien y córtalos en rodajas finas. Calienta el aceite en una sartén, añade las rodajas, sazona con tres cucharadas de sal y cocina durante diez minutos.

Then, prepare a pot with water and the remaining salt and bring it to a boil. After the zucchini have been cooking for ten minutes, add the sautéed mushrooms to the pan, stir, and cook everything together for another twelve minutes. When the water boils, add the rice and cook for about fifteen minutes.

Drain well, add the zucchini and mushrooms from the pan to the rice, and season with a tablespoon of oil and pepper. Serve hot—an excellent and simple risotto perfect for rainy days.

Luego, prepara una olla con agua y la sal restante y ponla a hervir. Después de que el calabacín se haya cocinado durante diez minutos, añade los champiñones salteados a la olla, remueve y cocina todo junto durante doce minutos más.

Cuando el agua hierva, añade el arroz y cocina durante unos quince minutos. Escurre bien, añade el calabacín y los champiñones de la olla al arroz y sazona con una cucharada de aceite y pimienta. Sirve caliente: un risotto excelente y sencillo, perfecto para los días de lluvia.
