Hello my friends, happy weekend to everyone. I hope you're all doing well. Today I'm here to share a recipe that has particularly impressed and delighted me. I'm talking about a vegan strawberry and blackberry cake with a vegan meringue, which is wonderful. I've made vegan cake before, but this one was definitely special. The vegan meringue or snow cone gives it a luxurious and different touch. I also prepare it with only aquafaba, the liquid that comes in canned cooked chickpeas. I'm telling you, it's a marvel for vegan dessert recipes. It perfectly replaces eggs and egg whites. Anyone who sees this meringue wouldn't guess it's vegan. A very easy dessert to make, and as always, a delight. So join me as I prepare this magical dessert.

Vegan strawberry and blackberry cake with a special meringue vegan


Ingredients:

  • 1 and 1/2 cup of wheat flour.

  • 3 tablespoons of aquafaba,

  • 2/3 cup of sunflower oil.

  • 3/4 cup of sugar.

  • 100g of finely chopped strawberries and blackberries.

  • 12g of baking powder.

  • 100ml of almond milk or plant-based milk.

  • A pinch of salt.


For the Meringue:

  • 100 g aquafaba.

  • 100 g powdered sugar.

  • 1 tablespoon lemon juice.

Process:

1- First, pour in the milk and remove the three tablespoons of aquafaba. Then, in a bowl, add the sugar, milk, oil, and aquafaba. Mix well until everything is well combined.




2- Next, add the sifted flour, baking powder, and salt and mix with circular movements until you have a smooth, soft dough.


3- Before adding the strawberries and blackberries, coat them with a little wheat flour. This is to prevent them from sinking in the mixture. Then, add them to the cake batter and stir with circular movements.


4- Add the mixture to a previously greased pan lined with baking paper and bake in a preheated oven for approximately 45 minutes, or until golden brown.

5- Once the time has passed, and our cake is ready, remove from the oven, let it cool, and then remove from the pan.

6- While the cake is resting, we make the magic meringue, we just have to add the aquafaba to the mixer and start beating for several minutes, until it has foamed well, then we add the lemon juice, continue beating, finally we add the powdered sugar in parts, continue beating until we obtain a firm consistency.
