Greetings my friends, how are you today? I hope you're all well, resting in honor of Labor Day. Congratulations to all those who contribute their part every day with their work. Today I want to share a recipe. It's the first time I've made it, vegan, and honestly, it's just as good as the one I used to make. I'm talking about broccoli gratin. On this day, my husband went shopping, and since he knows I love broccoli, he brought me some. It wasn't very fresh, but I couldn't let it go to waste. So I cooked it this way, with an exquisite vegan béchamel sauce. It turned out fantastic. It's a great alternative for dinner or lunch. A very simple recipe, with few ingredients, yet delicious. I'm sharing the step-by-step instructions.
Broccoli gratin with béchamel sauce vegan

Ingredients:

50 g all-purpose wheat flour.
50 g vegetable butter.
1 large broccoli.
600 ml soy milk (I used vegetable milk, oat milk, and coconut milk).
Salt and pepper.
3 tablespoons breadcrumbs.
Spices to taste. I used paprika powder and oregano.
Process:
1- Wash and chop the broccoli, then cook it in a pot with water and salt for a few minutes, approximately 5 minutes. Then, add it to a bowl of ice and water to cool it. Set aside.



2- Next, prepare the béchamel sauce. First, add the butter to a preheated pot over medium-low heat. Once it's completely melted, add the flour and stir until well combined. Then, add the vegetable milk. Continue stirring, adding salt and pepper, and stir until the mixture thickens. Remove from heat.




3- When the béchamel sauce is ready, drain the broccoli well and add it to the pot with the cream. Mix everything well and set aside. Meanwhile, add the breadcrumbs, spices, paprika, and oregano. Add the cream and broccoli mixture to a baking dish, and top with a layer of oil. We add the breadcrumbs and put them in the oven to gratinate.




4- Let it sit in the oven for about 20 minutes, or until it's golden brown. Remove from the oven, serve, and enjoy this delicious dish. You can pair it with some vegetable protein. I ate it alone; it was delicious. I really loved it. A practical, simple, and nutritious dinner.
