I prepared and eat rice with plant power pepper soup

‎This is actually my first time posting in this community but not my first engagement with the community members because I love reading and learning different cooking skills and styles from members of this community.

‎Today, I prepared a delicious chicken pepper soup which i enjoyed with white rice. So, let me give full details of how I prepared it as a vegan.

Ingredients

‎Chicken = 1 kilo
‎Pepper = 10 medium bulbs (though, you can add more or lesser to your taste)
‎Onion = 1 big size
‎Ginger = 1 medium finger
‎Ehuru powder = 1 teaspoon
‎Water = As desired
‎Garlic powder = ½ teaspoon
‎Aiden fruit = 1 medium size
‎Scentleaf = 15 sizeable leaves

‎Preparation procedures

‎Wash pepper, onions,scent leaves, ginger and Aiden fruit. Then, pound onions, ginger and pepper. Also, wash Aiden fruit and cut into 6 parts, also wash and slice the leaves.

‎Then, Wash the meat thoroughly with salt and water. Then, put in a dry pot. When I say dry pot, it means that there shouldn't be water inside the pot tho, the pot may be wet, please don't add any water to the meat. Then, add pepper, pounded onions and ginger, salt and Aiden fruit. Stir and allow to simmer for 5 minutes. Or base on the quantity of meat, the water that may come out from the meat can even be enough for the cooking. But base on the fact that mine is just 1 kilo, the water wasn't enough. So I added water immediately as soon as I discovered that the water it produced was draining up. But I didn't allow it to drain.

‎After adding water to taste, I covered the pot and allowed it to simmer for more 3 minutes. Then, I added the ehuru powder and garlic powder. Stir and allow to simmer for more 2 minutes, then, I added scent leaves. I then covered the pot for more 1 minute and then bring it down.

i enjoyed it with white rice and hot tea. But you can eat it raw or enjoy it with either beer, wine or soft drink of your choice

‎The taste of this pepper soup is too sweet. Though I didn't add anything like seasoning cube as a vegan. Do you know the secret? It is ehuru powder. Ehuru is our local ingredient made from ehuru fruit. It gives perfect taste to your food as well. Am in love with ehuru and garlic.
