Cherry tomatoes, onion and fluted pumpkin leaves

Greetings, friend's. I welcome you all to my blog, and I hope you had a good Wednesday. I've been super busy working round the clock and not having enough time as I used to for exploring various dishes and sharing in this amazing community. I had been craving for a natural vegetable sauce with simple ingredients. But due to my busy schedule, I've not had time to prepare it. So yesterday, I saw some street sellers hawking fresh vegetables. I got it and on the same road, I got very fresh cherry tomatoes and then later, I got potatoes.

My basic ingredients were available, so what's stopping me from satisfying my cravings? I got into cooking at night and insisted I wanted to have fresh vegetables sauce when hubby suggested we ate something different for dinner because it was already late. I was so happy that I achieved my goal, and I enjoyed the vegetable sauce with its extra freshness like it was plucked from the garden.

I used the following ingredients to prepare my dinner.
Ingredients
15 potatoes
12 cherie tomatoes
2 onions
3 hot scotch bonnet pepper
1 cooking spoon vegetable oil
Half teaspoon curry masal
Half teaspoon salt
1 teaspoon soy sauce
300g sliced pumpkin leaves

PREPARATION

  1. I started by pealing and chopping potatoes. I washed them properly afterwards and set aside.

  1. Next is to wash tomatoes and onions and chop them into desired shape and size.


Now, the basic ingredient is ready, so let's get cooking.

COOKING TIME
▪︎ Get a clean non-stick pan and add the vegetable oil, followed by onions when hot. Allow to sautée for a few minutes and add in sliced tomatoes. Fry for 4 to 5 minutes.

▪︎Add the spices (curry masala, salt) and any other preferred herbs. Stir and cover for the tomatoes to release its juice.
Wash vegetables with salt and add to the already fried tomatoes. Stir and add the soy sauce, taste to adjust spices, and cover for 1 minute.

▪︎Turn off the heat and boil the potatoes with salt for 15 to 20 minutes on medium heat. Serve along with the vegetable sauce. It was a good combination, very delicious, healthy, filling, and yummy 😋 😊
