It's weekend and I decided to make some veggie pasta for dinner for my family. I wanted to have some fiber to our meal so I decided to make this delicious pasta with crunchy vegetables. Here are the ingredients I used
• 2 packs of penne pasta
• 6 big carrot sticks
• 2 medium onion bulbs
• 2 bell peppers
• 3 cooking spoon Vegetable oil
• A handful of scotch bonnet pepper
• 2 pack of tomato paste
• 2 seasoning cube
• Garlic and ginger
• salt, curry and thyme
Preparation
Put some water enough to cook the pasta in a pot and bring to boil
Scrape, wash and chop the carrots into strips
Peel wash and chop the onions
If the water is boiling put in the pasta and add some salt
Blend the scotch bonnet with garlic and ginger
Wash and cut the bell peppers into strips
Check the pasta if it soft enough and take away from the heat to drain the water
Put the vegetable oil in the pot on fire and put in some thyme, onions and the tomato paste when it's hot.
Add the blended peppers, ginger and garlic
After 3-5minutes put in the carrots and leave to cook for 2 minutes
Put in the cooked pasta, mix and leave to cook for 1 minute
Put in more onions and the bell peppers
Mix and eave for a few seconds so they don't over cook and the veggie pasta in ready
