Hello vegan lovers, thank God it's Friday! Today I will be sharing a plantain recipe I made. It's plantain porridge with veggies. Plantains are large starchy fruits related to bananas but not as sweet as bananas. They are usually cooked before eating. They are also a good source of carbohydrates, fiber, vitamins and minerals. They can be fried, boiled or dried to grind into flour. They can be cooked ripe or unripe.
My plantain porridge with veggies has the following ingredients
• A bunch of big ripe and fairly ripe plantains
• 4 cooking spoons of palm oil
• A handful of scotch bonnet peppers
• 6 medium sized carrots
• 2 green bell peppers
• A small bunch of spring onions
• 2 onion bulbs
• Seasoning and salt to taste
Steps to cook
Peels and cut the plantain into small bits
Wash and chop the onions, carrots bell peppers and spring onions
Wash and crush or blend the scotch bonnet pepper
Put the chopped plantain in a pot with onions and salt, add some water and cook.
Put in the peppers and palm oil immediately and let it cook for a few minutes.
Add some seasoning. It doesn't take long before ripe plantains cook so keep an eye out while cooking.
In a pan put in a drizzle of oil and steam the carrots, bell peppers, some onions and last the spring onions
Take it off the heat after 3-5 mins so they don't overcook and pour into the cooked plantain porridge. Adjust the taste and it's ready.
