Greetings dear friends of #plantpoweronhive, this is my participation in the vegan mini contest. The potato is one of the stem tubers that I like the most and that is why it is always present in my kitchen. It is a very versatile vegetable, it can be used in soups, au gratin with cheese, in stews, there is no stew that I prepare without potatoes and its friend the carrot, in salads it is the protagonist, I like to prepare it with carrots and beets, also just with tomato and onion. French fries are the most popular, they accompany hamburgers and go very well with tomato sauce. Despite the many recipes that can be made with potatoes, I prefer them very simple, boiled to make salads and also mashed. I'm not a big fan of fried foods, so I really enjoy my simple and healthy version when I eat potatoes. I invite @leidimarc to participate.

I missed this super comment, sorry for the delay, @hylene74. I agree with you, potatoes are much tastier when eaten boiled, roasted, or baked, simply, without much seasoning. For example, I like to eat them boiled or baked, with just salt and oil. I often wish I could leave the skin on, but I can't find organic potatoes where I live, so I remove the skin, even before boiling or baking them. Potatoes are very nutritious and versatile.

Hi, I have seen that some people leave the skin on the potatoes and that way they season them, they must be delicious, but I can't get organic potatoes, so I have to eat peeled potatoes. Greetings.
