Qurator's: Hive Top Chef! | Apples | Apple pancakes for breakfast


Greetings dear friends, welcome to my blog. Today I am once again joining the weekly contest Qurator's: Hive Top Chef! | Apples. This week, apples are the stars of our dish. At first, I didn't know what to do. I hesitated between red and green apples. I like the latter better, but in the end I opted for the red ones.



The most common thing to make is apple pie or tart, but since I don't have the necessary equipment for this type of recipe and the conditions, I decided to make something simpler: apple pancakes. I had never made them before, but I thought it was a good idea to take advantage of the nutrients in fruit and oats at breakfast time and give traditional pancakes a different twist. This vegan version contains oat flour, which I found ready-made at one of my favorite supermarkets, coconut milk, baking powder, and, of course, apples. It should have had vanilla too, but I forgot to add it, can you believe it?.


Red apples are known for being sweet, unlike green apples, which are more citrusy. However, I added a touch more sweetness with sugar. I practically roasted them, just brushing oil on the pan to prevent them from sticking to the surface. I did this every time I added batter to make a pancake. Both apples and oatmeal contain many nutrients, so I had a luxurious breakfast with lots of fiber. Recipe for 7 pancakes.

Ingredients


- 1 apple (100 g)
- 1 1/2 cups oat flour
- 1 1/2 cups coconut milk
- 2 teaspoons baking powder
- Sugar to taste
- Soybean oil



Preparation


1.-. Wash the apple, peel it, and cut it into very small pieces.



2.-. Place the apple pieces in a blender, add the coconut milk, and blend well until the apple pieces are thoroughly crushed.



3.-. Add the coconut milk that you have blended with the apple, the oatmeal, the baking powder, and sugar to taste. Blend well until you have a smooth, slightly thick mixture.




4.- Grease a frying pan with oil and add the mixture, making sure not to add too much so that the pancakes can be flipped easily. Cook over medium-low heat for a minute and a half on each side. When you see bubbles forming on the surface, it's time to flip them. They will be golden brown on both sides after this cooking time. Repeat the same procedure until all the mixture is used up.



We serve the pancakes with some apple slices.

Wow, that looks delicious! This recipe really caught my attention. These apple-flavored pancakes are very tempting, and the oatmeal gives them that fluffy texture. Yum!
