Hello, friends, food lovers, and community greetings! Recently, we celebrated 17 May, the Norwegian national day. As usual, everybody likes to have a treat that day. The main dessert on that day is different cakes using lots of cream and berries. But this time, I wanted to try my vegan chocolate cake using oat milk. It is nice to share this delicious recipe with you, vegan lovers.

Ingredients:
2.5 cups of white flour
200 grams of sugar
250 ml/1 cup of oat milk.
1 cup cocoa powder
1.5 tsp of baking powder
2 pinches of salt
1 lemon zest
100 grams of dark chocolate
3/4 cup oil
1 tsp vanilla extract
1/2 cup cashews soaked in water for at least 3-4 hours and drained water.
1/2 cup powdered sugar

Making oat milk

1/2 cup soaked oatmeal
1.5 cups of water
1 tbsp oil
How to prepare oat milk

In soaked oats, add 1 cup water and 1 tbsp oil.
Using an immersion blender, I blended it until a smooth paste.
Using a cheese cloth, strained it. Here, I used 1/2 cup more water. milk and fibers were separated.
You can maintain thickness according to your choice.

20220516_102207.jpegfrom 1/2 cup oatmeal I got 350 ml milk. I used 270 ml for the cake.
The leftover milk I kept in the refrigerator. can stay around 3-4 days, you can use it when you need.
The leftover fibers can be used in bread or porridge.

Preparing cake

Brushed a cake pan using a few drops of oil and placed a baking paper on the bottom, then brushed oil on it. Kept it aside.

I used 250 grams, a little more than 1 cup of oat milk, in this cake.

In a mixing bowl, mixed oat milk and oil.
Mixed it well.

Added 150 grams of sugar, saved 50 grams. Made a nice mixture.

Added lemon zest.

Added 1/2 cup cocoa powder to a half cup of water and mixed it until well combined. Added 1 tsp vanilla extract.

Poured the cocoa syrup into the mixture of oat milk, oil sugar mixture.

Mixed it well.

Added flour mixed with a pinch of salt and baking powder.

Mixed it lightly until well combined.

Added chopped chocolate to the mixture.

Placed the mixture in the cake pan.

Baked it in a preheated oven at 180 C for around 40- 45 minutes.
It should be more/less minutes, depending on your oven.

Let it cool down.

44.jpeg Mixed water with 50 grams of sugar in a saucepan and place it on the stove.

Add 1/2 cup of cocoa and cook until it turned into a syrup.
Remove from the heat and cool it down.

Poured the cocoa syrup into the cake cracks. Saved 2 tbsp for making cream.

Removed the baking paper from the cake bottom.
Placed the cake on a plate

In a mixer jar, put the soaked cashews and the remaining cocoa syrup.blended it until fine paste.

Added powdered sugar, mixed it well, and ran the mixer for 2 more minutes.

Poured the cashew cream on top of the cake.
Used a fork to make a design.

Mixed powdered sugar and a few drops of water, made a sticky paste to write on top.

So be it earthquake I think I wouldn't leave a trace of this vegan dessert. Because it's my favorite, chocolatey and looks amazing, plus the end result was like nothing happened. Greetings
