African Vegan Peppersoup.

Good day everyone, welcome to my blog. It's a beautiful Friday, and I am happy the weekend is here already.

Today, I made one of Africa's delicious recipes known as peppersoup, and I believe you will love it. Pepper soup, just as the name says, is a very spicy soup that many Africans enjoy, especially during the rainy season because of its health benefits and how it keeps us warm.

The funny thing about the soup is that a lot of people purchase it rather than preparing it themselves at home, and you find it more at bars or other fun spots. It can be expensive depending on the ingredients, but the truth remains that the soup is most times sold for thrice or twice the cost.

I always enjoy this soup at home in different ways with my family and can't get tired of it. Preparing this is quite simple, and I will be taking you through the process.

Ingredients

  • 750g plantain.

  • 400g of sweet potatoes.

  • 4 pieces of small carrots.

  • 2 teaspoons of pepper soup powder— It's the combination of different medicinal herbs.

  • 3 teaspoons of chili pepper.

  • 60ml of groundnut oil.

  • 2 piece of garlic.

  • 8 pieces of ginger.

  • 1 small onion ball.

  • ½ teaspoon of salt.

Preparation.

I started by processing all the ingredients before going into the preparation properly.

  • I peeled the back of the plantain and cut the plantain into too small sizes. (One into 3-4 pieces.)

  • I peeled the potatoes as well and cut them into smaller sizes. I rinsed and kept potatoes in water.

  • I cut the carrot & onions into smaller sizes. I chopped the garlic & onions into smaller sizes and kept everything aside.

After processing the ingredients, I went on with the preparation.

  • I started by boiling the potatoes and plantains in a pot with just water.
  • I allowed them to cook for just 7 minutes before extracting the plantain and some of the potatoes.

  • I left some of the potatoes to cook more so they can get soft and removed them when they had properly cooked.
  • I put them in a bowl and mashed them with a spoon. I added little quantity of water and stirred. (You can save yourself the stress by just blending and can even get a smoother texture that way.)

  • I poured some groundnut oil into the pot and added the onions.
  • I allowed the onions to fry for a few minutes before adding the mashed potatoes into the pot.
  • I poured 50cl of water into the pot.
  • I added the chopped garlic and ginger.
  • I added three teaspoons of chili powder.
  • I added two teaspoons of the pepper soup powder.
  • I added ½ teaspoon of salt and stirred all the ingredients in the pot properly.

  • Immediately the ingredients in the pot started boiling, and the boiled plantain and potatoes joined the party.

  • I stirred again, ensuring that all the plantains and potatoes were properly soaked in the soup. I allowed them to boil for another five minutes on low heat.
  • Finally, the carrot joins the party.

  • I stirred again and allowed the soup to cook for just another three minutes.

As usual, the outcome of my soup came out awesome. Spicy, delicious, and healthy for whoever cares to give it a try.

Woooow pepper soup looks so good in very curious about African recipe, this one look so rich and perfect for a meal after a hard day of work.
