Smooth and Delicious Oatmeal Quesillo [ENG - ESP]

Oats are one of those very versatile cereals; when it comes to making recipes, they are a great ally for our vegan drinks and desserts. My pantry may lack many things, but oats should never be missing.

  • La Avena es de esos cereales muy versátiles, a la hora de hacer recetas es un gran aliado para nuestras bebidas y postres veganos, en mi alacena pueden faltar muchas cosas, pero nunca debe faltar la Avena.

Today we're going to make an extraordinary recipe, of course, without dairy or eggs, because it's vegan, but I guarantee that this Quesillo is very tasty, with a very delicate flavor and a smooth texture. The sweetness will depend on how much sweetener you want to use, although this one has caramel and I think that should be enough.

  • Hoy vamos a hacer una receta extraordinaria, por supuesto, sin lácteos, ni huevos, porque es vegana, pero te garantizo que este Quesillo queda muy rico, con un sabor muy delicado y una textura suave, el dulzor va a depender de cuanto endulzante quieres usar, aunque este lleva caramelo y creo que con eso debería de ser suficiente.

This recipe doesn't require much time to prepare, no oven is needed, you just need a little patience to wait the hours it needs to be in the refrigerator.

  • Esta receta no amerita de mucho tiempo para su elaboración, no hace falta horno, solo se necesita un poco de paciencia para esperar las horas que debe estar en el refrigerador.

Ingredients

-90 grams of oats, previously soaked in water for at least 8 hours.
-625 ml of plant-based milk or water.
-2 tablespoons of granulated panela (unrefined cane sugar) or your preferred sweetener, to taste.
-70 grams of cornstarch (cornflour).
-2 tablespoons of vanilla extract.
-17 cm diameter mold.
-For the caramel: 80 grams of sugar.

  • 625 ml de Leche vegetal o Agua.
  • 2 Cucharadas de Panela granulada o el endulzante que prefieras y cantidad al gusto.
  • 70 gramos de fécula de maíz (maizina).
  • 2 cucharadas de esencia de Vainilla.
  • molde 17 cm de diámetro.
  • Para el caramelo: 80 gramos de Azúcar.

Let's get started with the preparation:

  • Vamos con la preparación:

We start by making the caramel, and it's as easy as putting 80 grams of sugar in a pot and cooking it over low heat until the sugar melts completely and we get a beautiful golden color.

  • Comenzamos haciendo el caramelo, y es tan fácil como echar en una olla los 80 gramos de azúcar poner a cocinar a fuego bajo hasta que el Azúcar se derrita por completo y obtengamos un bello color dorado.

Once the caramel is ready, we immediately pour it into the mold we are going to use, sliding the caramel down the sides of it, being careful not to burn ourselves, and set it aside.

  • Al estar listo el caramelo, lo vertemos inmediatamente en el molde que vamos a usar, deslizando el caramelo por las paredes de este, teniendo cuidado en no quemarnos, reservamos.

Now we're going to make the mixture for our Quesillo.

The oats we're going to use need to be soaked. I soaked mine overnight, about 10 hours. Once soaked, we'll drain the water and put the oats in the blender.

  • Ahora vamos a hacer la mezcla para nuestro Quesillo.

  • La Avena que vamos a usar debe estar hidratada, yo la puse a hidratar de un día para el otro, aproximadamente 10 horas, una vez hidratada le vamos a sacar esa agua y la echamos en el vaso de la licuadora.

Next, we're going to add the plant-based milk, but first, we're going to add the cornstarch to this milk, beat it very well, and now we'll pour it into the blender. For this preparation, I'm using 625 ml of almond milk, but in this step, I only used 500 ml, reserving 125 ml for when I heat this preparation.

  • Luego vamos a agregarle la Leche vegetal, pero antes, a esta leche le vamos a incorporar la Maizena, batimos muy bien y ahora si la vertemos en la licuadora, para esta preparación yo estoy usando 625 ml de Leche de Almendras, pero en este paso solo usé 500 ml, reservando 125 ml para cuando lleve al fuego esta preparación.

Add the sweetener, I used 2 tablespoons of granulated panela, use whatever sweetener you have on hand and as much as you like.

  • Agregamos el endulzante, yo he usado 2 cucharadas de Panela granulada, usa el endulzante que tengas a mano y la cantidad que gustes.

Now we're going to blend everything very well, making sure the oats are well crushed. Blend for approximately 2 minutes.

  • Ahora vamos a licuar todo muy bien, que la Avena quede bien triturada, licué aproximadamente 2 minutos.

Then we pour this mixture into a pot, and pass it through a sieve if you want a smoother mixture.

  • Luego vertemos esta preparación en una olla, la pasamos por un colador si deseas una mezcla más lisa.

We cooked it over medium heat, added the rest of the milk, the remaining 125 ml. I owe you a photo, I forgot to take one.

  • Llevamos a cocinar a fuego medio, le agregamos el resto de la Leche, los 125 ml que quedaban, aquí les debo la foto, se me paso tomarla.

Very important to stir constantly.

  • Muy importante remover constantemente.

When we see that the mixture is thickening, we quickly add 2 teaspoons of vanilla essence, and continue stirring.

  • Cuando veamos que la preparación está espesando, le añadimos rápidamente 2 cucharaditas de esencia de Vainilla, seguimos removiendo.

This preparation will be ready when it comes to a boil and the mixture easily detaches from the pot; at that moment, we remove it from the heat.

  • Esta preparación estará lista cuando rompa a hervir y la mezcla se despegue fácilmente de la olla, en ese momento bajamos del fuego.

We quickly pour it into the mold with the caramel, trying to make it as neat as possible.

Let it cool a little, then cover it with cling film or aluminum foil.

  • Dejamos enfriar un poco, le ponemos por encima papel film o papel aluminio.

We put it in the refrigerator for at least 4 hours.

  • Llevamos al refrigerador mínimo por 4 horas.

After the time has elapsed, we take it out of the refrigerator and turn our Quesillo out onto a plate. This is done carefully so that our dessert doesn't get damaged and comes out looking as beautiful as possible! 😍

  • Transcurrido el tiempo, sacamos del refrigerador y volteamos nuestro Quesillo en un plato, ¡esto se hace con cuidado para que nuestro postre no sufra daños y salga lo más bonito posible! 😍

overall it seems healthy and exquisite. Some nutrition specialists blame the cornstarch and milk for not being that healthy at all though

Many people say that oats and cornstarch aren't very healthy, but this dessert is generally perfect for people who can't eat wheat flour, dairy, or eggs.
