THIS IS MY PARTICIPATION IN THE VEGAN MINI CONTEST. Raw ! anytime. as a child, I did not like beets at all, as probably most kids, but later on in life, once i discovered it while living in Argentina I took a liking to it. but, for the longest time, I prepared it cooked, not knowing that I would later like it even more once I discovered one can eat it without cooking.
a lot of water has passed under the bridge since and now, I not only eat it, mostly raw, but I also grow beets so they do not get fresher then that. my favorite way of consuming them is probably in a salad, alongside tomatoes and lettuce leaves.
Yes, it's common for children to dislike beets (with very few exceptions, like my daughter, who always loved vegetables, even as a baby), so it's great that you discovered this delicious vegetable. You can prepare it grated, with cilantro, lettuce, carrots, tomato, onion, or cabbage—it's ultra delicious. And also in juice, with orange and carrot, it tastes spectacular!

Ahh, both cooked and raw? Wow, I like your style shaa. But the first time you tasted it, was it raw or cooked?
I seem to remember that raw in a 3 in 1 juice, as we say here in Venezuela, which is beet, orange and carrot. My mom used to prepare it when we were kids because of that and because it boosted our defenses due to its vitamin C content.
But, I love potato, beet and egg salad hahaha. But, I should not abuse beet, because specialists have told me that it can raise sugar a bit, so I have to consume it in moderation. Greetings @marajah!!!
