Empanadas With Curry Flavor

I was curious about empanada, a type of food that is very familiar to see in market snacks here called curry puff. But, it turns out this food has another name. Where does Empanada come from? I saw it in various posts from my hive friends. I was really interested.

Trying my cooking skills, I always do this cause it really challenges me. Even though I'm really not sure if I can make it. But I found a recipe that was very easy to follow. I tried it slowly without missing a single step, then I tried it for the third time with improvisation.

A really careful improvisation, it turned out to taste better than I imagined. Adding curry leaves that come from one of the plants that I have cared for since long ago, I always use it as a complement to cooking if I want a food with a very strong aroma.

Empanada With Curry Ingredients:

  • 200 gr wheat flour
  • 50 gr margarine (plant based butter)
  • 100 ml canola oil, oil for frying
  • Salt, pepper, mushroom pepper
  • 50 ml water
  • 200 gr potatoes
  • 100 gr carrots
  • 2 pieces of spring onions
  • 5 cloves of shallots and garlic
  • 10 sheets of curry leaves

How ​​to make Empanada With Curry Leaves:

  • After preparing the basic ingredients, next I clean the potatoes and carrots which I will peel and cut into several small pieces like the size of cubes.

  • The shallots and garlic that have been peeled must also be pureed with a blender. Don't forget to saute it with a little oil. After that, I add the potatoes and carrots that have been prepared earlier, then saute until the potatoes and carrots have a soft texture. Add salt, sugar, pepper and also curry leaves. Cook until the water dries up and is ready to be used as empanada filling. Next I will make empanada dough.

  • Mix flour, margarine and canola oil. Then add 50ml of water so that the dough becomes a very smooth dough. Rolled with a tool and get a thin skin as desired.

  • Initially I wanted to use a tool to make curry puffs, but it turned out to be very difficult because the dough was very different, so I used a fork to close the edges of the empanada that had been filled with vegetables.

  • After that, fry or bake, whatever you want. But I want to know what it looks like when fried. It turned out to be successful and ready to be served as a snack for today.
