It was a cloudy day, and past few days had been raining. Everyone feels like having a steamboat at home but I just have not much energy to go out to load up vegetables. We only have potatoes and carrots left for vegetables. Hence, let's cook a mutton stew, something simple and light, easy to cook for my hectic day.
To add on to my responsibilities, my youngest son is not feeling well, having mild fever, throat irritation and coughing. Being a child with compromised lung, I really have to monitor his breathing and oxygen saturation.
Back to Mutton Stew!
I have one more pack of mutton cut, it is time to make full use of it. I believe everyone needs an ample amount of protein and a sufficient amount of healthy fats to keep the body at optimal function.
Such beautiful mutton cuts. Have it wash clean and usually I marinade with salt for a couple of hours.
For the vegetables, just these will do: big onion, carrots and potatoes. Plus a considerate amount of garlic which I think I read somewhere has natural antimicrobial and antioxidant properties.
Diced them up according to desired cut and wash them clean.
Then, all ingredients would be placed into the pot. Followed by adding water, just enough to cover the ingredients. Here, I used multipurpose electric pot which is suitable to cook stew, soup, as well as boiling rice. I put the stew to 2.5 hours!
After 2.5 hours!
Voila!!!! The whole house smell so good, just with these natural ingredients. For seasoning, I added salt and black pepper, as well as 2 tablespoon of cooking cream to get that light creamy flavour. I love all the natural oil/fat from the mutton, so nope, I'm not going to skim away the fat. Doctor says it is good for women's hormones, so I will eat them all!
The boys enjoyed the stew with a plate of basmathi rice. My husband and I skip the rice, because it was already night time. Guess what, we ate our dinner in front of TV showing "28 years later", zombie's show. Not gonna lie, it was not a good choice! Lol!
