Let me share my homemade pancake recipe to you. It's good if you have a tight budget and are health-conscious.
Listen up, because as a concerned older sister to my lil' brother who is in elementary- who's a super picky eater. Dealing with his picky eating is no joke. No wonder he has that attitude- like mother, like son. Our mother was also a picky with food, especially anything with a bad smell or an unusual taste.
I'm in charge of giving baon to our youngest brother, so I tried to plan something different. I started looking for cheap, easy recipes that wouldn't get boring after a week. And after the same crackers everyday, that's where these ube pancakes came in.

Being able to make something with the ingredients at home makes it convenient to try new recipes that are useful for my family. Everyone is doing their best every day, so they deserve good food as a reward.
It was still too early for snacks, so I found myself looking for something to do and shake off the boredom. As I wandered through the quiet house, I noticed my father at the back, focused on his garden.
FATHER'S GARDEN




He was moving from one plant to another, taking his time under the morning sun. He was cleared the area, pulled out some stubborn weeds, and loosened the soil with his old guna.
I was happy just watching my father work, but I didn't jump in to help because I had my own patch of garden waiting for me. Weeks earlier, he had planted squash and bitter gourd at the back. That morning he was busy building a balay-balay, or pala-pala, using branches from cut trees and stretching a net on top. It was his way of making a simple trellis- something the vines could climb on, and where the heavy fruit could rest once it started growing.
While capturing the moment, this little buddy was busy playing around, and stealing the spotlight.




Lunchtime came around, so I headed inside to cook. Once we were done eating, I was ready to try my ube pancake plan.




Pro tip: Add a pinch of salt to balance the sweetness.
Next up was cooking. I heated a frying pan on medium-low heat, then spooned in the batter little by little. Once the edges looked set and the bottom turned a bit brown, I carefully flipped each pancake to cook the other side.

The outcome? Amazing. The taste? Delicious. My mother and siblings loved it. Unfortunately, my father didn't. The reason I made this pancake without eggs is that my mother doesn't like the smell of egg in pancakes- so I made this version.
This isn't only a budget-friendly snacks for the family. With just a few ingredients, it's also something you can turn into a small business in your own community.
