Pumpkin Arepas [ENG/ESP]

We all know that a good breakfast starts with a delicious arepa, but what better way to give it a new twist than by pairing it with vegetables? In this case, I wanted to try the famous pumpkin arepas—a unique blend with a different color, aroma, and, of course, flavor.

Lately, while trying out different recipes, I’ve started creating these dishes; honestly, I do it for two reasons: to stick to my diet and to learn how to prepare healthy recipes so I can share them.


INGREDIENTS: 👇

  • 1/2 pumpkin
  • 2 cups bread flour (gluten-free)
  • salt

PREPARATION:


To prepare, the first thing we do is cook the butternut squash with a little water; let it soften as much as possible.

You can do this the day before, in the afternoon; save it for the next day so you can put it in the blender. It’s a good tip; it saves time, trust me. 😄

Once the pumpkin is pureed, we mix it with the flour.

We start kneading; you can add the pumpkin little by little so that it blends with the dough until it looks like this. 👇

Once our dough is ready, all that’s left is to shape our arepas; we place them on the griddle to cook on both sides, and that’s it.

Here are our delicious arepas; to go with them, I made a zucchini and carrot omelet.

They were really delicious, actually. I tried these arepas at my aunt’s house in Valencia, except she added cheese, and hers turned out thinner, but still very tasty, that’s for sure.

My plan was to make them that way, but I didn’t have any cheese, hehe, maybe next time. They were still good enough to eat; there wasn’t even any left for a snack. 😄



SPANISH VERSION

Bien sabemos que un buen desayuno comienza con una rica arepa, pero qué mejor forma de darle otro sabor que combinándola con verduras. En este caso, quise probar las famosas arepas de auyama, una mezcla diferente, con otro color, aroma y sabor, por supuesto.

Estos días, probando recetas diferentes, me he puesto a crear estos platos; la verdad, lo hago con dos intenciones: cumplir con mi dieta y aprender a preparar recetas saludables, y así poder compartirlas.


INGREDIENTES: 👇

  • 1/2 Auyama
  • 2 tazas de harina pan (sin gluten)
  • sal

PREPARATION:


Para la preparación, lo primero que hacemos es cocinar nuestra auyama con un poco de agua; dejamos que se ablande lo más que se pueda.

Pueden hacerlo un día antes, en la tarde; lo guardan para el otro día, así llevarlo a la licuadora. Es un buen tip; se ahorran tiempo, créanme. 😄

Una vez licuada la auyama, procedemos a unirla con la harina.

Empezamos a amasar; pueden ir agregándole la auyama poco a poco, para que vaya compactando con la masa, hasta quedar de esta forma. 👇

Una vez lista nuestra masa, solo nos queda formar nuestras arepas; la llevamos al budare, que se cocine por ambos lados, y listo.

Así nos quedan nuestras ricas arepas; para acompañarlas, hice una tortilla de calabacín con zanahoria.

Muy ricas, la verdad, estas arepas las probé en casa de mi tía, en Valencia, solo que ella les añadió queso, y les quedaron más delgadas, pero bien sabrosas, eso si.

Mi idea era hacerlas de esa forma, pero no tenía queso, jeje, para la próxima. Igual se dejaron comer; no quedó ni para la merienda. 😄
