A triangle happiness: Samosa!!

Have you ever heard about Samosa? Who has not heard about Samosa...India's most famous snacks. I think everyone knows about Samosa and you must have eaten it too. The crispy, flavourful, flaky fritter filled with spicy potato filling.

So come lets make India's popular snack Samosa that is potato fritters. There are so many variation of the filling.
Today I am making the simple potato filling without onion and garlic.


So , lets start to make:



Ingredients-

Boiled potato-½kg
Peanuts-2 tbspn
Curry keaves-3/5
Oil-2tbspn
Asafoedita-½tspn
Green chillies-3
Ginger-½tbspn
Garam masala-½tbspn
Cumin seeds-½tspn
Salt - to the taste


For dough

All purpose flour-½kg
Nigella seeds-½tspn
Salt- to the taste
Water - to knead
Oil-for Moin(to make make samosa flaky)


METHOD

Boil potatoes and let them cool.

Then peel it. Crumble the potatoes and keep aside.

Heat oil in a kadhai.

Add cumin seed, asafoedita curry leaves, green chilies and grated ginger.

Then add crumbled potatoes.

Later add salt, black salt, garam masala and mix it properly.

Add litle coriander leaves (optional).keep the filling aside and let it cool.

Now for the dough.
Take all purpose flour.

Add nigella seeds.

Add salt

And oil.

Rub the flour in between the palm to mix up the oil well. While rubbing we can see that of the flour we can hold in a shape that means its perfect we shouldnot put more oil. But the shape is not there while holding the flour in palm that means the oil is not sufficient.
Then by little water knead a tight dough and keep aside for 1 hour.

The dough should be stiff n

Heat oil in a kadhai.

Roll out the dough in a oval shape, should be little thick not too thin.

Cut the center and make two parts

Now join the edges to make triangle shape or cone shape.

Hold in hand properly..

Further place the potato filling with spoon

Press the filling little down .

Apply water on the edge and stick it properly and seal the edges.

Make sure to seal the samosa well. Place 5 to 6 samosa on a tray and cover . Dont make more at a time because they will dry soon.

So make 4 to 6 samosas and began to fry.

Heat oil for frying . The oil should be moderate hot ...not too hot..

Now fry the samosa at low flame till they are firm , golden and crispy.

Its ready to eat with Green chutney or Tamarind chutney.

Enjoy the hot, flaky, crispy and delicious home made samosas without any guilt.
