A Taste of Home: My Perfect Fried Rice Recipe Filled with Love and Flavor

Love is cooking, cooking is love.
Cooking should not be gender based as some usually say that the home of a woman is the kitchen, to me, a man should as well know how to cook any type of food.

There is always something soothing and uplifting about the tantalising smell of a well ganished frier rice whirling through the air, fried rice is not just any meal prepared in Nigeria, it is mainly prepared during celebration and most parties favourite. A Sunday special meal specially prepared and served with love on a colourful plate. So, get along with me as I share with you the vibrant - bursting with flavour and rich version of my fried rice recipe. Though people do have a different way of preparing fried rice.

Below are the ingredients I used for myself alone.

• 4 cups of medium grain of rice.
• small quantity of salt to taste.
• 5-7 medium size diced carrots
• 2 medium size diced spring onions.
• stock meat seasoning
• ½ cup of pure soya vegetable oil
• 1 spoonful of grind Maggi or 2 cubes Maggi seasoning
• ½ teaspoon of thyme
• ½ teaspoon of curry powder
• fried rice seasoning powder
• 5-7 well chopped fresh green beans — canned green beans, dried greens beans.

How I started:

• I firstly washed my rice thoroughly to remove all dirt and I perboil until it was halfway cooked-not totally cooked but soft. I then drained it with a sieve to remove excess starch and to prevent any form of the rice been soggy.

• Either you are using chicken or any meat, prepare your meat and season it with curry, thyme, onion, salt Maggi and any good seasoning as for the stock gotten to give the rich the magical and rich flavour.

• in a medium or large clean pot, pour the vegetable oil to heat and saute the diced spring onions, stirr for like a minute before adding the diced green beans including the can and dried one, carrots and stirr very well for like 4-5 minutes. Don't allow it to burn, keep stirring until it keeps the crunch.

• add all the seasoning-curry, thyme, maggi, stock water and stir. Pour the rice into the pot and gently stirr thoroughly until the flavour and colour is eventually distributed and absorbed the flavour.

• On a low heat, cover the pot and allow the rice to steam and simmer until it well cooked and fluffy. Keep checking to avoid getting a burnt fried rice.

• serve hot with fried chick, beef and a chill drink.

Trying this recipe at home will give you a mouthwatering pot of fried rice with each of the ingredients used having its unique contribution to the flavour and the taste in your mouth.

Like I said earlier, fried rice in Nigeria is not just a food, it always brings memories of family gathering, Christmas period, Easter period, celebrations and it it a way of keeping traditions alive.
