That's very thoughtful, and I'm sure that s/he appreciated it. Of seafood, I love fish the most, though I don't eat it as often as I'd like, even living in Hawai'i, go figure...lol! Although I never had an interest in it professionally, I've always very much enjoyed making delicious, nutrient-dense, healthful food, especially for others. I've noticed that most people don't understand how to balance flavors, which are like musical notes, well at all, even in many restaurants.
