India produces over 50% of global jackfruit, Yet crores worth of it still rots away. Meanwhile, the global jackfruit market is projected to cross $450 million by 2030, fueled by the rise of plant-based meat and healthy snacking. Here's the crazy part. In the US, jackfruit-based vegan burgers sell for 30 to 50 times the price farmers earn back home. So it's a problem related to wastage, preservation, and branding problem.
To fix that, entrepreneurs are freezing jackfruit, vacuum-packing it, turning it into flour, snacks, or mock meat, targeting a vegan market set to hit $24 billion by 2030. Jackfruit's low glycemic index compared to roti and rice could also be a game-changer for India, which as we all know is named the diabetes capital of the world.
