Feeling Under the Weather? Here’s My Go-To Chicken Soup Recipe!

A few days ago, I caught a cold and had to stay home from work. Living alone means there’s no one around to take care of me or help, so I decided to make myself some chicken soup to feel better.
You might have heard that chicken soup is like magic medicine for colds! The warm steam helps open up your airways, and spices like ginger and turmeric boost your immune system. Plus, chicken soup keeps you hydrated and helps reduce fatigue.
Ingredients:
Chicken breast, onion, ginger, cooked carrot, cooked mushroom, water, salt, black pepper, tomato paste, turmeric, radish, vermicelli noodles, fresh parsley, and lemon.
How to Make It:
First, I boiled the chicken breast with water, onion, ginger, salt, black pepper, and turmeric. After the chicken was fully cooked, I strained the broth and shredded the chicken.
Then, I added tomato paste to the broth along with cooked carrots and mushrooms (you can use raw ones if you prefer—they will cook in the soup). Next, I put in the vermicelli noodles and let everything cook for a few minutes. Finally, I stirred in fresh parsley to add flavor and freshness.
When serving, I like to offer a wedge of lemon so everyone can squeeze some juice into their soup to brighten up the taste.
This simple but nourishing soup really helped me feel better during my sick days.
