





Today we had another one of my most favorites for lunch: aloo baingan (potato and eggplant curry) with boiled rice, mint and pomegranate chutney. Even the plate itself made me eager to eat.
Rice and aloo baingan is my personal favorite comfort meal which I once wrote about in a blog post somewhere — just simple rice and soft, mushy aloo baingan.
They were beautiful, and cooked perfectly; each bite a taste of home. With the addition of that mint and pomogranate chutney came a new, zippy taste to swoon over. Often the simplest of foods are the most satisfying. This was a special homemade lunch after such a busy morning! It was in my stomach and it has brought me more happiness. Does not need to be fancy, just cooked with love.
