🐝Beware of wild wasps! But not in Thailand🍲

What is your immediate reaction when you see a wild wasp or a giant hornet buzzing around? If you are like most people, you probably freeze, step back slowly, and carefully move away to avoid getting a nasty, painful sting.

But out here in the rural villages of the Isan region, the locals look at wasps with a completely different kind of fervour. Instead of running away, they roll up their sleeves and prepare for a hunt. Why? Because inside those dangerous nests lies one of the most expensive and sought-after delicacies in all of Thailand.


The Golden Larvae: A Creamy Luxury 🍯

In Thailand, the larvae and pupae of wild wasps and hornets are a legendary culinary treat. They are incredibly valuable for their massive protein content and a surprisingly delicate, rich, creamy, and nutty flavour profile.

A Quick Comparison: If you have ever tried local ant eggs, you might know they can sometimes have a flat, earthy taste, reminiscent of old, damp hay. Wild wasp larvae are on a completely different level. They taste like a premium, savory custard with a hint of nuttiness. It is an absolute favorite among the locals.

However, finding them is a rare stroke of luck. First, you have to trek deep into the jungle or scout the high trees to locate a hidden hive. Once spotted, it requires serious preparation and the right tools to launch a successful raid.

The harvesting process is intense: the hunters first use heavy smoke to disorient and drive out the aggressive adult wasps. After that, they carefully torch the hive's outer layers. This has to be done with extreme precision—if you use too much heat, you risk burning the delicate larvae and pupae inside, which are the most valuable parts of the entire haul.


Dismantling the Hive: A High-Stakes Snack 🥢

Once the hive is secured, it is brought back home to the village veranda. This is where the meticulous work begins. The locals sit together and carefully dismantle the comb, plucking plump pupae and white larvae from each cell one by one.

Interestingly, the feasting often begins right during the cleaning process! Yes, you can absolutely eat them straight up, completely raw. At this stage, the larvae and pupae are often still alive and squirming.

  • Pro Tip from the Locals: If you decide to pop a live larva into your mouth and don't want to feel it moving around on your tongue, you need to chew it immediately!

  • The Hidden Danger: You also have to be incredibly careful to watch out for any stunned adult wasps hidden deep in the combs. If they are still breathing, their stingers are fully functional, and a sudden sting to the hand or lip can ruin the whole experience.


Market Value and the Ultimate Isan Curry 🌾

So, what happens once the entire harvest has been meticulously plucked out?

Eating them all raw is an extreme luxury because wild wasps are incredibly expensive. Depending on the season and the region, the market price for a single kilo of clean wasp larvae can shoot up to 1,000 Thai Baht! Because of this high price tag, locals usually sell a portion of the catch for a nice profit and keep the rest to create a legendary regional dish.

Today, we used our fresh catch to prepare a true Isan masterpiece called "Keng No Mai Sai To" (แกงหน่อไม้ใส่ตัวต่อ), which translates to a rich, spicy bamboo shoot curry with wild wasp larvae.

The creamy texture of the boiled larvae perfectly balances the sharp, earthy crunch of the bamboo and the fiery local spices. Naturally, the entire meal was served with a massive basket of steaming sticky rice, shared in a warm, welcoming, and loud family atmosphere.

This is just another authentic day of how we live, forage, and enjoy the wild side of life here in rural Thailand!
