Yummy spicy Thai-style fruit salad 🥗
Hello, friends! 🤗 I hope everyone is doing well. This morning, I bought a variety of fresh fruits from the market. Of course, eating a diverse range of fruits is good for your health, and I always try to encourage my kids to enjoy eating fruits and vegetables, too! Eating them fresh without any processing is best, but... sometimes I make exceptions, hehe. Today, I decided to turn these fruits into a well-known dish: a mixed fruit salad. But I’ll add a little Thai-style seasoning to enhance the flavor. Here’s how!
Ingredients:
- 4 tbsp fish sauce
- 4 tbsp lime juice
- 2 tbsp sugar
- 2 tbsp fermented fish sauce
- 1 tbsp dried chili flakes
- 1/2 cup sliced shallots
- 2 tbsp dried shrimp
- 1/2 cup green apple
- 1/2 cup red apple
- 1/2 cup dragon fruit
- 1/2 cup corn
- 1 tomato
- 1/2 cup guava
(Note: Measurements are approximate. Adjust to taste.)
Instructions:
- Prepare the dried shrimp:
- Rinse the dried shrimp, then soak in hot water for 5–10 minutes to soften. Drain and set aside.
Prepare the fruits:
Wash the tomatoes,guava, green apples, and red apples, then pat dry. Dice them into small cubes.
Use pre-cooked corn, simply cut the kernels off the cob.
Cut the dragon fruit in half and scoop out the flesh, then dice into small cubes.
Make the dressing:
In a mixing bowl, combine fish sauce and sugar. Stir until the sugar dissolves. Add lime juice and dried chili flakes. Taste and adjust the balance of sweet, sour, and salty to your preference. Then, add the sliced shallots and half of the prepared dried shrimp (save the rest for garnish).
Assemble the salad:
Gently toss all the prepared fruits in the dressing until well combined. Transfer to a serving plate and top with the remaining dried shrimp.
