That Thai eggplant soup looks delicious, I've never seen round eggplants where I live so they're a little strange to me hahaha. The salt water trick is clever because when I cook eggplant it turns brown no matter what I do, mixing lemongrass shallots and chili peppers must give it a nice flavor without having to use any very special ingredients, lately I've been trying to eat lighter and I think recipes like this could help me achieve that.
