Hello, how are you? I never knew I could cook chicken with pork. I always ask my mom what food I am going to cook because she is the one who buys the ingredients for the food we eat.
Sometimes when my cousin gets home for vacation, I need to cook extra food for him, and I ask my mom. I think the chicken is not enough for us five, so she said we still have pork in the fridge.
I like my adobo, thick or dry sauce, and my dad always tells me to add more sauce to it, but sometimes, if the food is watery, the savory of the sauce seems bland. So I sometimes ignore my dad's request LOL.
Ingredients and Prepping:
- Cooking Oil
- 8 potatpes
- 2 Bell Pepper
- 1 Carrot
- 500g Pork
- 500g Chicken
- 1/2 tsp. Salt and Pepper
- 1 Bulb Garlic
- 2 Red Onion
- 4 Bay Leaves
- 4 tbsp. Soy Sauce
- 2 tbsp.White Vinegar
- 1/2 tsp. All-in-one Seasoning
- 6 cups of water
Let's Cook!
In a hot pan, I added half a cup of cooking oil. This is for frying the potatoes and carrots.
And then I fried the potatoes and carrots. I like it almost fried, and you can just fry it for about 5 minutes. After that, I set them aside.
I remove almost all the cooking oil and then start rendering the pork first because it produces oil when cooked.
And then I added salt and ground pepper. It is up to you how much you're going to add.
You know when the pork is cooked when some part of it turns brown, after that, I set it aside.
Next, I cook the chicken, same as the por.k I added salt and pepper and let it cook until browning starts appearing.
After that, I added the pork I had cooked earlier. I mix them until well combined, just a personal thing I do.
Then, after that, I added garlic, red onion, and red bell pepper. Then cook them until the aroma comes out. I like to add the bell pepper at the start because the flavor of it adds a unique taste to the food.
After that, I added ground and whole pepper into the food.
After that, I added 5 bay leaves, which add more aroma to the food.
Then I added about 4 tablespoons of soy sauce.
After that, I added 2 tablespoons of white vinegar, which helps the food taste better. At first, I wonder why people add white vinegar to the adobo, now that I cook, "Oh, that is why."
To make the adobo more savory, I added just a half teaspoon of all-in-one seasoning.
After that, I added about 6 cups of water to the pan.
Let it cook for about 25 minutes with the lid on.
5 minutes before the timer goes on, I added the potatoes and the carrots and let them cook until soft.
Plated and served hot!
