Cooking Blog: Pork Ribs Adobo with Potatoes, Bell Pepper and Carrots

Hello, how are you? It has been a while since I tasted pork ribs, and I cannot imagine what it tastes like again LOL, my mom bought one, so I was craving for savory food, and ofcourse nothing beats the adobo. Everyone loves adobo, and I was supposed to cook it like sinigang style, but I am not into it at the moment.



Ingredients I Used:

  • Half Kilo Pork Ribs
  • Half Cup Cooking Oil
  • 4 Potatoes
  • 1 Carrots
  • 1 Bell Pepper
  • 4 Cloves Garlic
  • Red Onion
  • 4 Tablespoon Soy Sauce
  • 1/4 tsp. Ground Pepper
  • 1/4 tsp. Chili Powder
  • 1 tbsp. White Vinegar
  • 2 tsp. Brown Sugar
  • 1 tsp. All-in-one seasoning
  • 1 litre Water


Let's Cook!

In a hot pan, I added half a cup of cooking oil.

Then I added the potatoes in.

I fried it until golden brown and crispy. I like it this way, and it is optional but highly recommended. Set it aside for later use.

And then, same as the carrots, I fried it until browning started appearing on it, then set it aside alongside the potatoes.

I reduced the oil in the pan and left about 1 tablespoon of it, and then I added the pork ribs, and I cook it until the color change into light brown.

And then I added the aromatics alongside the bell pepper, cooking them until the fragrance of the aromatics came out.

After that, I added spices like ground pepper. I added about 1/4 teaspoon of it.

To add spiciness to it, I added 1/4 teaspoon of chili powder, skip it if you don't like it spicy.

Then I added a tablespoon of white vinegar, it help balance the taste and to tenderize the meat too.

To balance the saltiness, I added 2 teaspoons of brown sugar.

To make it more flavorful, I added a teaspoon of all-in-one seasoning.

Mix them all, and then I added a litre of water, and then let the meat cook for about 1-2 hours, if you have a pressure cooker better! Add water as needed.

When the meat is tender enough, I add the potatoes and carrots, and cook them for about 5 minutes.

And done! Serve hot and plated.
